✔️ Why you'll love these homemade sausage rolls with puff pastry
- Only 5 ingredients - simple, budget-friendly ingredients turn into delicious homemade sausage rolls with minimal prep.
- Perfect for any occasion - ideal for lunchboxes, picnics, party food, and festive gatherings.
- Make-ahead and freezer-friendly - batch cook now and have easy snacks ready whenever you need them.
🥘 Ingredients
Ready Rolled Puff Pastry - for ease, use a ready-rolled sheet of puff pastry, or make your own homemade puff pastry if you prefer. If you prefer using shortcrust pastry, check out my easy recipe for shortcrust pastry sausage rolls.
Sausagemeat - pork sausagemeat can usually be found with the bacon and sausages in the chiller section at the supermarket. Alternatively, squeeze the meat out of 8 thick sausages. You will need 400g.
Stuffing Mix - adds seasoning and texture to the sausage filling. Sage and onion works particularly well, but any flavour can be used. US substitute: Use a dry bread stuffing mix (such as Stove Top), or ½ cup breadcrumbs mixed with dried herbs and a pinch of salt.
Apple Sauce - either homemade apple sauce or from a jar.
Egg - for glazing the sausage rolls.

- Honey mustard - stir a teaspoon of honey mustard into the sausage meat for a sweet and tangy kick.
- Garlic and onion flavour - mix in a pinch of onion powder, garlic powder, and extra black pepper for added depth.
- Poppy seed topping - sprinkle poppy seeds over the egg-washed pastry before baking for extra texture.

- Festive Christmas rolls - add chopped dried cranberries and chestnuts for a seasonal version perfect for parties.
🔪 How to make sausage rolls with puff pastry
The recipe card with ingredient quantities and detailed instructions can be found at the bottom of the post
One: Preheat the oven to 220°C / 200°C fan / 425°F / Gas Mark 7. Line a large baking tray with parchment paper (baking paper). In a mixing bowl, combine the sausage meat, dry stuffing mix, and apple sauce until well blended.
Two: Unroll the puff pastry onto a board and cut it in half lengthways to create two long rectangles. Divide the sausage mixture in half and shape each portion into a long log down the centre of each pastry strip.
Three: Brush egg wash along one long edge of each pastry strip. Fold the opposite side of the pastry over the sausage filling so the edges meet. Press the seam together with a fork to seal, then turn the rolls seam-side down. Cut each long roll into 8 equal pieces to make 16 sausage rolls in total. Place them onto the prepared baking tray, leaving a little space between each one.
Four: Use a sharp knife to make a small slit in the top of each sausage roll. Brush the tops with the remaining egg wash, and sprinkle with poppy seeds if using. Bake for 15-18 minutes until the puff pastry is golden, crisp, and cooked through.

Top Tips
- Preheat the oven fully - ensure your oven is completely preheated before baking. Puff pastry needs high, steady heat to rise and become golden and flaky.
- Use egg wash generously - brush the pastry evenly with beaten egg for a glossy, golden finish. Don't skip this step!
- Leave space between rolls - arrange the sausage rolls on the baking tray with a little space around each one. This allows the pastry to puff evenly and prevents them from sticking together.
- Seal edges well - press the seams firmly with a fork to prevent filling from leaking during baking.
- Score the tops - a small slit in the top of each roll lets steam escape and keeps the pastry crisp.
🍴 Serving suggestions
The puff pastry sausage rolls are perfect for popping into lunchboxes or taking on picnics.
They also make a tasty addition to Afternoon Tea, served alongside other bite-sized treats like mini cucumber sandwiches, scotch eggs, chocolate tiffin, and fruit scones.
For a heartier option, try making a giant sausage roll or a sausage plait and serve it with baked beans and cheesy chips for a simple weekend lunch. They're also delicious with a side of homemade cranberry sauce for dipping, adding a sweet and tangy twist.

Storage
Room temperature - store cooked sausage rolls in an airtight container for up to 24 hours.
Refrigerator - keep cooked sausage rolls in the fridge for up to 3 days; reheat in the oven to crisp.
Freezing uncooked - freeze assembled rolls on a tray, then transfer to a bag for up to 2 months; bake from frozen.
Freezing cooked - freeze baked sausage rolls for up to 1 month; reheat in the oven until crisp.
❓ Frequently asked questions
Place already baked sausage rolls onto a baking sheet lined with baking paper. Sprinkle over a small amount of water and place in a hot oven (220°c/ 200 fan/ 400F/ Gas 6) for 5 minutes. Microwaving sausage rolls makes the pastry soggy so is not recommended.
Troubleshooting Guide
| Problem | Fix |
|---|---|
| Pastry is soggy | Make sure the oven is fully preheated, use high heat, and don't overcrowd the baking tray. Brush generously with egg wash and bake on parchment. |
| Sausage rolls shrink or spread | Chill the assembled rolls for 10-15 minutes before baking and press seams firmly to seal. Don't overwork the pastry. |
| Pastry isn't puffing | Ensure your puff pastry is cold and hasn't been overhandled. Avoid microwaving before baking. Bake on a preheated tray for best rise. |
| Filling leaks out | Seal edges tightly with a fork and leave a small slit on top for steam to escape. Don't overfill the pastry. |
