🥘 Ingredients
Ready Rolled Puff Pastry - or use your own homemade puff pastry. If you prefer using shortcrust pastry, check out my easy recipe for shortcrust pastry sausage rolls!
Sausagemeat - pork sausagemeat can usually be found with the bacon and sausages in the chiller section at the supermarket. Alternatively, squeeze the meat out of 8 thick sausages. You will need 400g.
Stuffing Mix - a small (80g) dry stuffing mix. I use sage and onion flavour but you can use any flavour you want.
Apple Sauce - either homemade apple sauce or from a jar.
Egg - for glazing the sausage rolls.

One: Preheat the oven and line a baking sheet with baking paper. In a bowl, mix together the sausagemeat, stuffing mix and apple sauce.
Two: Lay the puff pastry sheet on a board and cut it in half horizontally (on the long edge so creating two long rectangles of pastry). Divide the stuffing mix into two and lay the mixture down the centre of each long piece of pastry.
Three: Brush some egg wash on the bottom edge of each piece of pastry, then fold the top of the pastry over the sausagemeat so it joins the bottom. Use a fork to press the edges together. Cut each long roll into 8, making 16 small sausage rolls in total. Place the sausage rolls on a baking sheet lined with baking paper.
Four: Use a sharp knife and make a small slit in the top of each sausage roll, then brush with the egg wash. Bake in the oven for 15 minutes until golden brown.
Top Tips
- Ensure your oven is fully preheated before baking the sausage rolls; this is key for achieving a crisp, flaky pastry.
- Generously brush each roll with egg wash to achieve an even, golden colour during baking.
- Arrange the sausage rolls with space between them on the baking tray to allow for even cooking and proper puffing.
🍴 Serving suggestions
The sausage rolls are great for popping into lunchboxes or taking on picnics.
They are also great for Afternoon Tea, alongside other bitesize treats such as mini cucumber sandwiches, chocolate tiffin, and fruit scones.
I sometimes make giant sausage rolls or a sausage plait and serve them with baked beans and cheesy chips for an easy lunch at the weekend. They are also delicious with a homemade cranberry sauce for dipping.
📖 Variations
The basic recipe can be changed to suit what flavours you prefer. Here are a few suggestions;
- Replace the apple sauce with caramelised onion chutney for a richer flavour.
- Add a small handful of grated cheese (cheddar is best) to make sausage and cheese rolls.
- Add a sprinkling of poppy seeds to the top of each sausage roll after you have glazed them with egg wash.
- Make them vegetarian by using the filling from veggie sausages.
- At Christmas, add chopped dried cranberries and chestnuts.
🧊 Suitable for freezing?
The sausage rolls can be frozen unbaked or baked. If freezing unbaked, do not apply the egg wash before freezing.
Place the sausage rolls (minus the egg wash) onto the prepared baking sheet and open freeze for a few hours (place the baking sheet directly into your freezer uncovered).
Once frozen, place the sausage rolls into freezer bags. The sausage rolls can be cooked straight from frozen but don't forget to apply the egg wash before you put them in the oven.
❓ FAQS
Once cooled, keep any leftover sausage rolls in a sealed container in the fridge for up to 3 days. If you prefer eating them warm, pop the sausage rolls into a hot oven for 5 minutes to refresh.
Check the temperature of your oven is accurate with an oven thermometer. Sausage rolls need a hot oven to help crisp up the puff pastry.
Place already baked sausage rolls onto a baking sheet lined with baking paper. Sprinkle over a small amount of water (about ½ teaspoon for each sausage roll) and place in a hot oven (220°c/ 200 fan/ 400F/ Gas 6) for 5 minutes. Microwaving sausage rolls makes the pastry soggy so is not recommended. Don't forget that sausage rolls can also be eaten at room temperature.

Ingredients
- 320 g Ready Rolled Puff Pastry Sheet or use homemade puff pastry.
- 400 g Sausagemeat or use the equivalent weight in sausages, with meat squeezed out of the skins.
- 80 g Dry Stuffing Mix I use sage and onion flavour.
- 3 tablespoon Apple Sauce
- 1 Egg
Instructions
- Preheat the oven to 220°c (200 fan/ 425F/ Gas 7) and line a large baking sheet with baking paper.
- In a bowl mix together the sausagemeat, stuffing mix and apple sauce.400 g Sausagemeat, 80 g Dry Stuffing Mix, 3 tablespoon Apple Sauce
- Lay the ready rolled puff pastry sheet onto a board and cut it in half on the long edge, so you have two long rectangles.320 g Ready Rolled Puff Pastry Sheet
- Divide the stuffing mix between the two rectangles and make a sausage like shape with the mixture in the middle of each piece of pastry.
- Brush the top and bottom long edges of each piece of pastry with beaten egg (using a pastry brush) and then fold the top of the pastry over the sausagemeat to meet the bottom of the pastry. Use a fork and press down the edges.1 Egg
- Cut each length into 8 sausage rolls so you have 16 in total and place on the baking tray.
