    🛒 Ingredient notes

    Ingredients for sausage plait.

Sausage Meat - use a good quality sausage meat, or the filling from 6 thick pork sausages.

Apple Sauce - adds a delicious sweet tangy flavour to the savoury sausage meat. You could also use cranberry sauce or caramelised onion chutney.

Breadcrumbs - a small amount of dried breadcrumbs helps to bind the filling.

Thyme - use fresh or dried thyme or swap for rosemary or sage.

Puff Pastry - a sheet of ready rolled puff pastry means making this recipe is a breeze. Simply unroll and go!

Sesame Seeds - for a lovely crunch.

Egg - the egg wash helps to create a crispy golden brown pastry case.

🔪 How to make sausage plait in air fryer

The recipe card with ingredient quantities and detailed instructions can be found at the bottom of the post

    Sausage meat in a bowl.

One: Place the sausage meat, apple sauce, thyme, and breadcrumbs in a large bowl and mix with a spoon.

    A sheet of puff pastry.

Two: Unroll the sheet of puff pastry on a board and cut it in half leaving two smaller rectangles (as shown above).

Three: Divide the sausage meat mixture into two and place down the middle of each piece of pastry, allowing a gap of 2cm at the top and bottom.

Cutting a lattice into puff pastry.

Four: With a sharp knife cut the pastry at a diaganal (as shown above) The strips should be 3-4 cm wide. Then cut a straight line at the top and the bottom of the pastry from the outer edge of the pastry to where the sausage meat starts, leaving a small square at each end which you can fold up on top of the sausage meat.

Five: Lay the pastry strips over the filling in a lattice (criss cross) pattern.

Six: Place the two sausage plaits on a baking tray that will fit in your air fryer. Brush with the egg wash and scatter over the sesame seeds.

Seven: Air fry for 20-25 minutes at 180°C (350°F).

Eight: Allow to cool for 5-10 minutes before slicing and serving.

    Top Tips

    • Take the pastry out of the fridge 5 minutes before starting the recipe.
    • The lattice top isn’t just for looks; it helps the pastry cook evenly while allowing steam to escape from the sausage meat. Take your time to cut even strips and weave them carefully for a beautiful finish.
    • Brushing your pastry with an egg wash before baking will give it a beautiful golden shine and add an extra layer of crispness.
    • Just like an oven, preheating your air fryer ensures that your sausage plait starts cooking at the right temperature from the moment it goes in, leading to better texture and even cooking.
    • Air fryers can vary in power, so it’s important to keep an eye on your sausage plait during cooking. Adjust the time as needed to achieve that perfect golden brown without overcooking.

    🍴 Serving suggestions

One classic option is a side of creamy mashed potatoes and baked beans, which can help to balance out the richness of the sausage and pastry.

Another great option is a simple salad, which can provide a refreshing contrast to the warm and hearty plait.

    📖 Variations

    • Add grated cheese and finely chopped fried onions to your sausage meat for a tasty filling. Cheddar works well!
    • For a vegetarian alternative, replace the sausage meat with a mixture of lentils, breadcrumbs, grated vegetables, and herbs. This version is not only hearty but also packed with nutrients.
    • For a summery, vegetable-packed version, include roasted peppers, sundried tomatoes, olives, and feta cheese in your filling.

    🥡 Storage

Store - The air fryer plait is best eaten fresh from the air fryer. Leftovers can be stored in an airtight container in the fridge for up to 3 days.

Reheat - Oven bake or air fry for a few minutes, which will help the pastry to crisp up again.

Freeze - The cooked sausage plait can be frozen for up to 3 months.

    ❓ Frequently asked questions

Can I make a sausage plait in advance?

Yes, you can prepare your sausage plait in advance. Assemble it up to a day before, cover, and refrigerate. When you're ready to cook, simply place it in the air fryer, adjusting the cooking time as it might take slightly longer from chilled.

How do I keep my sausage plait from getting soggy?

To prevent sogginess, ensure your pastry is cold when you work with it, and don't overload the filling. Also, preheating your air fryer helps to start the cooking process immediately, ensuring the pastry crisps up nicely.

What can I use instead of sausage meat?

If you're looking for alternatives to sausage meat, consider using minced beef, pork, lamb, or a vegetarian substitute like lentils or meat-free mince. You can season these alternatives similarly to how you'd season sausage meat.

Can I make this recipe gluten-free?

To make a gluten-free sausage plait, use a gluten-free puff pastry and ensure your sausage meat and other fillings are free from gluten. Always check labels for hidden sources of gluten.

What are the best seasonings for sausage plait?

Herbs such as sage, thyme, and rosemary pair wonderfully with sausage meat. Spices like nutmeg, paprika, or fennel seeds can add depth.

How do I know when my sausage plait is cooked through?

Your sausage plait is done when the pastry is golden and crisp, and the internal temperature of the sausage meat reaches 75°C (165°F) when checked with a meat thermometer. This ensures it's safe and delicious to eat.
