🥘 Ingredients

Nutella - the star of the show in these tasty Nutella blondies.
Butter - unsalted butter is best and it needs to be melted.
Caster Sugar - I used golden caster sugar but ordinary caster sugar can also be used.
Light Brown Sugar - helps give the blondies a lovely fudgy texture. You can substitute it with dark brown sugar if you prefer.
Eggs - 2 large free-range eggs.
Vanilla Extract - for extra flavour.
Flour - white plain (all-purpose) flour.
White Chocolate Chips - or use milk chocolate chips.
Mini Peanut Butter Cups - or use peanut butter chips instead and/or add more chocolate chips.
🔪 Instructions

One: Melt the butter in a microwave safe bowl and allow to cool for a minute or two.
Two: Beat in the caster sugar and light brown sugar until pale and fluffy. By hand this will take about 3-4 minutes.
Three: Beat in the eggs until combined.
Four: Add the plain flour and vanilla extract and beat until combined.

Five: Fold through the mini peanut butter cups and chocolate chips.
Six: Spoon the mixture into a small brownie tin or 20cm square baking tin.
Seven: Dollop Nutella (which has been softened slightly for 10 seconds in the microwave) on top of the blondie batter.
Eight: Use a skewer to make swirls of Nutella through the blondie. Bake in the oven for 30 minutes. Leave to cool before cutting into squares.

Top Tips
- The hardest part about making these blondies is leaving them long enough to cool. To speed up the process I recommend placing them in your freezer for 30 minutes or your fridge for an hour, before cutting them into bars.
- To get those clean-cut lines, make sure the blondies are cool, and use a long sharp knife to cut them. Wipe the knife clean (be careful when doing this!) between each cut.
🍴 Serving suggestions
The blondies are great served as an after-school snack with a glass of milk.
I also serve them for dessert with honeycomb ice cream and chocolate sauce. You can warm the blondies up the microwave for a few minutes before serving.
📖 Variations
Here are a few flavour variations you could try;
- Use plain chocolate spread instead of Nutella.
- If you can't get hold of mini peanut butter cups, use peanut butter chips instead, or just increase the quantity of chocolate chips.
- Use a mixture of white, milk, and dark chocolate chips.
- Once baked, scatter the top with crushed salted peanuts for added crunch and texture.
- Use dark brown sugar instead of light brown sugar for a darker, richer flavour.

Once cooled store the blondies in an airtight container for up to 5 days. They can also be frozen for up to 3 months in a freezer-safe container. Place non stick baking paper between each layer to prevent them from sticking together.

The main difference is chocolate. Brownies are made with chocolate and/or cocoa powder, giving them that wonderful dark brown colour, and blondies are not (although they often have white chocolate in them).
Yes, just like brownies, blondies are meant to be gooey, fudgy and dense in texture.
The blondies should be golden around the edges with a very slight wobble in the centre. Place them in the fridge or freezer to set, which makes cutting them so much easier.

- 200 g Butter melted
- 125 g Caster Sugar
- 125 g Light Brown Sugar or use dark brown sugar
- 2 Eggs
- 2 teaspoon Vanilla Extract
- 275 g Plain Flour
- 100 g White Chocolate Chips
- 180 g Mini Peanut Butter Cups or use peanut butter chips
- 125 g Nutella softened in a microwave for 10 seconds
Instructions
- Preheat the oven to 180°C (160 fan/ 350F/ Gas 4) and line a small brownie tin or 20cm square baking tin with baking paper.
- Beat together the melted butter, caster sugar and light brown sugar until pale and fluffy (this should take 3-4 minutes).200 g Butter, 125 g Caster Sugar, 125 g Light Brown Sugar
- Mix in the eggs.2 Eggs
- Add the flour and vanilla extract and mix until combined.2 teaspoon Vanilla Extract, 275 g Plain Flour
- Stir through the mini peanut butter cups and chocolate chips.100 g White Chocolate Chips, 180 g Mini Peanut Butter Cups
- Spoon the mixture into the prepared tin.
- Melt the nutella for 10 seconds in the microwave and dollop spoonful's onto the top of the blondie mix. Use a skewer to create swirls in the mixture.125 g Nutella
