    Ingredients for honey flapjacks.

    Porridge oats – Use rolled oats for the best chewy texture. Avoid instant oats, which can make the flapjacks too soft (jumbo oats don't work well either).

    Unsalted butter – Melted with sugar and honey to bind the oats.

    Light brown sugar – Adds a subtle caramel flavour.

    Demerara Sugar - adds a lovely crunch.

    Honey – The star ingredient, giving sweetness and a lovely floral note.

    Vanilla Extract - for added flavour.

    🔪 How to make honey flapjacks

    Preheat the oven to 180°C (160°C fan) / 350°F / Gas 4. Line a 20cm square baking tin with baking paper.

    1. Melt the butter, sugar, and honey in a saucepan over low heat, stirring until smooth and combined.

    2. Stir in the oats and vanilla (and any optional add-ins) until fully coated in the buttery mixture.

    3. Press the mixture into the prepared tin, smoothing the top with the back of a spoon.

    4. Bake for 20–25 minutes until golden brown around the edges. Cool in the tin for 10 minutes, then score into squares or bars.

    Top Tips

    • Don’t overbake—flapjacks will firm up as they cool.
    • Press the mixture firmly into the tin to help the bars hold together.
    • For extra chewy flapjacks, add a tablespoon of golden syrup along with the honey.

    • Pack into lunchboxes for a sweet treat.
    • Serve with a dollop of yogurt and fresh berries for a quick dessert.

    • Fruit & Nut – Add 50g of chopped dried fruit and 50g of chopped nuts.
    • Chocolate Chip – Stir in 100g of chocolate chips just before pressing into the tin.
    • Seed Mix – Add a handful of mixed seeds like sunflower, pumpkin, or chia for extra crunch.

    Store in an airtight container at room temperature for up to 5 days.

    Freeze individually wrapped bars for up to 3 months. Thaw at room temperature before serving.

    ❓ Frequently asked questions

    Can I use golden syrup instead of honey?

    Yes, golden syrup can be used for a more traditional flavour and slightly chewier texture. Try my classic flapjack recipe.

    Why did my flapjacks fall apart?

    This can happen if the mixture wasn’t pressed firmly enough into the tin or if they were sliced before fully cooled.

    Can I make them vegan?

    Yes—substitute the butter with a plant-based alternative and use maple syrup or agave nectar instead of honey.

    • 5 tablespoon Honey
