🛒 Ingredient notes

Porridge oats – Use rolled oats for the best chewy texture. Avoid instant oats, which can make the flapjacks too soft (jumbo oats don't work well either).
Unsalted butter – Melted with sugar and honey to bind the oats.
Light brown sugar – Adds a subtle caramel flavour.
Demerara Sugar - adds a lovely crunch.
Honey – The star ingredient, giving sweetness and a lovely floral note.
Vanilla Extract - for added flavour.
🔪 How to make honey flapjacks
Preheat the oven to 180°C (160°C fan) / 350°F / Gas 4. Line a 20cm square baking tin with baking paper.

- Melt the butter, sugar, and honey in a saucepan over low heat, stirring until smooth and combined.

2. Stir in the oats and vanilla (and any optional add-ins) until fully coated in the buttery mixture.

3. Press the mixture into the prepared tin, smoothing the top with the back of a spoon.

4. Bake for 20–25 minutes until golden brown around the edges. Cool in the tin for 10 minutes, then score into squares or bars.
Top Tips
- Don’t overbake—flapjacks will firm up as they cool.
- Press the mixture firmly into the tin to help the bars hold together.
- For extra chewy flapjacks, add a tablespoon of golden syrup along with the honey.

Store in an airtight container at room temperature for up to 5 days.
