Preheat the oven to 180°C (160°C fan) / 350°F / Gas 4. Line a 20cm square baking tin with baking paper.
Melt the butter, sugar, and honey in a saucepan over low heat, stirring until smooth and combined.
225 g Unsalted Butter, 100 g Demerara Sugar, 100 g Light Brown Sugar, 5 tablespoon Honey
Stir in the oats and vanilla extract (and any optional add-ins) until fully coated in the buttery mixture.
