    These easy air fryer mini egg dessert pots are individual cookie dough style puddings stuffed full of Cadbury mini eggs. Just perfect for your Easter celebrations!

    🛒 Ingredient notes

    Ingredients for air fryer mini egg dessert pots.

    Mini Eggs - you'll need 150g of Cadbury mini eggs, plus a few extra for sprinkling on top. Chop or crush the mini eggs into smaller pieces with a sharp knife or bash with a rolling pin.

    Butter - unsalted butter melted in the microwave.

    Sugars - a combination of light brown sugar and caster sugar for the best texture.

    Egg - 1 large egg at room temperature.

    Vanilla Extract - use a good quality vanilla extract and not vanilla essence.

    Flour - white plain flour.

    Bicarbonate of Soda - the raising agent.

    Salt - a pinch of sea salt helps to balance the sweetness of the cookie dough.

    🥄 Equipment

    Which air fryer? I use the Ninja Foodi 5.8 litre Grill and Air Fryer with 4 customisable cooking functions including air fry, roast, bake, and dehydrate!

    What is an air fryer?

    Air fryers are small(ish) kitchen appliances that operate like a convection oven—except in a smaller, more concentrated space.

    The air is circulated at a high temperature and evenly around the food, which makes the food cook more quickly than in a conventional oven (saving energy), and helps give foods a crispy coating without the need for lots of oil and fat.

    🔪 Instructions

    One: Preheat the air fryer to 160C (320F).

    Two: In a mixing bowl beat together the melted butter, sugars, egg, and vanilla extract with a wooden spoon.

    Three: Mix in the plain flour, bicarbonate of soda, and salt.

    Four: Fold through the crushed mini eggs and divide the mixture between 4 ramekins.

    Five: Air fry for 7-8 minutes until the top is golden but the underneath is still gooey. Allow the pots to cool for 5 minutes before serving with ice cream and more mini eggs. Use oven gloves to lift the ramekins out of the air fryer as they will be very hot!

    💭 Expert tip

    The cookie dough mixture should come away easily from the sides of the mixing bowl. If it's still a little sticky, add a bit more flour.

    🍴 Serving suggestions

    Serve the air fryer mini egg desserts with ice cream. Honeycomb ice cream, mini egg ice cream, and salted caramel ice cream all work well. As does regular vanilla ice cream or clotted cream!

    📖 Variations

    • Use mini creme eggs instead of mini eggs. Freeze the mini creme eggs before using them in the recipe to prevent them from melting completely into the dough when cooked.
    • Add a handful of dark chocolate chips to the mixture for a richer flavour.
    • Swap out 30g of flour for cocoa powder for a more chocolatey taste.

    🥡 Storage

    Store: The air fryer mini egg pots are best eaten straight out of the air fryer with a scoop of ice cream. Leftovers can be stored in the fridge for up to 3 days.

    Reheat: Reheat in the air fryer or microwave.

    Freeze: Freeze the unbaked cookie dough mixture in the individual ramekins. Defrost in the fridge before air frying as directed in the recipe.

    What's the best way of crushing mini eggs?

    Use a rolling pin to bash the mini eggs in their packets. Be careful that the packet doesn't split though!

    Ingredients

    Metric - US Customary
    • 50 g Light Brown Sugar
    • 25 g Caster Sugar
    • 115 g Butter melted
    • 1 Egg
    • 1 teaspoon Vanilla Extract
    • 160 g Plain Flour
    • ½ teaspoon Bicarbonate of Soda
    • ¼ teaspoon Salt

    Instructions

    • Fold through the crushed mini eggs and divide the mixture between 4 ramekins.
