    Easy Easter meringue nests made with shop-bought mini meringues, lightly whipped cream, and decorated with Cadbury Mini Eggs and crushed Cadbury Flake.

    Meringue nests are a classic dessert that can be jazzed up for the Easter season with the addition of Cadbury Mini Eggs. These light, airy, sweet treats will become a new family favourite, and best of all, they're super easy to make if you use store-bought meringues!

    Make your own mini meringues from scratch if you prefer (whipping egg whites and caster sugar to stiff peaks), but you can get really good quality (crispy on the outside, chewy on the inside) meringues these days, perfect for busy people like me! It also means you don't have to get that piping bag out!

    Ingredients for Easter meringue nests.

    Meringue Nests - 8 store-bought mini meringues (buy the best you can afford!). Alternatively, make your own mini meringues by whisking egg whites, lemon juice, and sugar, then piping the mixture onto parchment paper in nest shapes and baking in the oven.

    Double Cream - lightly whipped until soft peaks form.

    Cadbury Mini Eggs - a large family bag.

    Cadbury Flake - crushed into small pieces for decoration.

    🔪 How to make Easter mini meringue nests

    One: Whip the double cream to soft peaks. If you are using an electric whisk this should take just a minute or two, by hand, it will take a little bit longer.

    Two: Fill the meringue nests with the softly whipped cream using a spoon.

    Three: Top with the mini eggs.

    Four: Sprinkle over the crushed flake. Chill until ready to serve.

    💭 Expert tips

    • Whip the cream to soft peaks in a mixer with a balloon whisk attachment, handheld electric whisk, or by hand. If you accidentally overwhip your cream, add a tablespoon more of double cream and use a handheld whisk to whisk it into the mixture to rescue it!

    🍴 Serving suggestions

    Serve the Easter pavlova nests for dessert on Easter Sunday after a main course of lamb, roast potatoes, and all the trimmings!

    The kids might like their meringues filled with mini egg ice cream instead of whipped cream! Try adding different chocolate Easter eggs on top too!

    📖 Variations

    • Make Cadbury Creme Egg meringues and top the whipped cream with halved creme eggs.
    • Flavour the cream with vanilla extract and a little icing sugar.
    • Fill the nests with chocolate buttercream instead of whipped cream.
    • Make them for Mother's Day and top the whipped cream with lemon curd, fresh fruit, and blueberry compote, instead of chocolate eggs.
    • Use different types of sweets and candy such as jelly beans and smarties.
    • Top the Easter meringue nests with meringue cookies!
    • Make one large Easter meringue instead of 8 individual ones.

    Make-ahead - The Easter meringue nests can be made up to 6 hours before serving.

    Store - Keep leftovers in an airtight container in the fridge for up to 3 days.

    Are Cadbury mini eggs gluten-free?

    At the time of publishing (March 2022) Cadbury mini eggs are gluten-free. Ingredients can change over time so it's always worth double-checking yourself

    Can I buy mini eggs all year round?

    Mini eggs are available to buy in all major supermarkets between February and April in the UK, so stock up when you have the chance! Some independent retailers do sell them all year round, but they are much harder to find.

    • 250 ml Double Cream heavy cream
    • 297 g Cadbury Mini Eggs
    • 1 Cadbury Flake crushed

    Instructions

      What a wonderful idea! I always have leftover egg whites, so I make meringue nests from scratch, but I love the Easter-themed decorations! Will definitely be making some of these for children this Easter!
