    Easy Cadbury Mini Egg Ice Cream: No Churn Recipe

    A delicious homemade mini egg ice cream recipe made with sweetened condensed milk, double cream, and crushed mini eggs! Perfect for Easter and beyond!

    This is a super easy 5-ingredient no-churn ice cream recipe without the need for an ice cream maker, just like my no churn honeycomb ice cream!

    Cadbury Mini Egg Ice Cream

    I used to have an ice cream maker, but when I discovered I could make creamy homemade ice cream WITHOUT one, I sold it! It took up too much room anyway!

    Condensed milk ice cream, like this, is so simple and quick to make, and best of all tastes absolutely amazing! The benefit of it being egg-free, means it's also suitable for children (and pregnant women)!

    What is no-churn ice cream?

    No churn ice cream is made without an ice cream maker. Ice cream machines churn the mixture as it freezes, to thicken it. No churn ice cream is made differently, by whisking the mixture until quite stiff.

    🛒 Ingredient notes

    Ingredients needed to make mini egg ice cream.
    Ingredients for Mini Egg Ice Cream
    • Mini Eggs - I use Cadbury mini eggs, but any hard shell chocolate filled mini egg would work. Crush them up with a rolling pin before using them in the recipe.
    • Sweetened Condensed Milk - One standard can (397g) is needed. Make sure you use sweetened condensed milk and not evaporated milk.
    • Double Cream (Heavy Cream) - helps make the ice cream creamy and rich.
    • Vanilla Extract - use a good quality vanilla extract and not vanilla essence, which isn't so nice! You could also use vanilla bean paste.
    • Flakes - I like to crumble in some Cadbury flakes into the ice cream for an extra chocolate hit. You could substitute with chocolate chips.

    🥄 Equipment

    You don't need an ice cream maker to make this no-churn ice cream!

    All you do need is a large mixing bowl*, electric whisk* or stand mixer with whisk attachment, and a freezable container (I like using a loaf tin*). * denotes affiliate links.

    🔪 How to make mini egg ice cream

    One: Place the double cream, condensed milk, and vanilla extract in a mixing bowl and whisk for at least 5 minutes with an electric hand-held whisk (or use a standing mixer with whisk attachment). The mixture needs to be very stiff before moving on to the next step.

    Two: Fold through the crushed mini eggs and crushed Cadbury flakes.

    Three: Spoon the mixture into a loaf tin or other freezable container and level off the top with a spatula.

    Four: Sprinkle over more crushed mini eggs and flakes. Freeze for at least 4 hours before serving.

    💡 Pro Tip - remove the ice cream from the freezer 10 minutes before serving to allow it to soften enough to make it scoopable!

    💭 Expert tips

    • The cream and condensed milk mixture needs to be whisked until it is very stiff. This will take at least 5 minutes with an electric whisk or stand mixer with whisk attachment on a fast setting. You could make the ice cream using a hand whisk but it will be very hard work!
    • When folding in the crushed up mini eggs, be careful not to beat the air out of the mixture. Gently fold them in with a metal spoon or spatula.

    📖 Variations

    • Why not swap the mini eggs for mini creme eggs and make creme egg ice cream?
    • Make it a chocolate-flavoured ice cream by adding cocoa powder.
    • You could also add in other Easter eggs or broken-up chocolate.

    🥡 Storage

    Store the ice cream in a lidded freezer-safe container in your freezer, and use it within 2 weeks. If you're using a loaf tin for storage, cover the top of the tin in foil to prevent freezer burn.

    Don't forget to remove the ice cream from the freezer 10 minutes before serving, to allow it to soften enough to scoop!

    No, you must only use sweetened condensed milk.

    What does condensed milk do to ice cream?

    Condensed milk is essentially cow's milk with the water content evaporated off. The thick and sweet milk acts as a sweetener and helps soften the ice cream, allowing for easier scooping.

    What's the best way of crushing mini eggs?

    I use a rolling pin to bash the mini eggs in their packets. Be careful that the packet doesn't split though!
