I always have leftover turkey after Christmas, and this easy Boxing Day turkey toastie made in the air fryer is a great way of using it up!
I love to add crispy cooked bacon, creamy brie, and sweet cranberry sauce in my turkey toastie, but you could also add in leftover sausage meat stuffing, cooked beef slices, and different cheeses too!

🛒 Ingredient notes

Turkey - sliced leftover cooked turkey.
Bacon - cooked bacon rashers (you can air fry bacon in just a few minutes in your air fryer, or use the grill). Alternatively, swap the bacon for cooked honey roast ham.
Brie - cut into slices, or swap for cheddar or blue cheese.
Cranberry Sauce - from a jar or homemade.
Bread - 4 slices of thick bread. I've used white bread, but use wholemeal or sourdough if you prefer.
Butter - softened for spreading.

What is an air fryer?
Air fryers are small(ish) kitchen appliances that operate like a convection oven—except in a smaller, more concentrated space.
The air is circulated at a high temperature and evenly around the food, which makes the food cook more quickly than in a conventional oven and helps give foods a crispy coating without the need for lots of oil and fat.

One: Preheat the air fryer to 180C (350F) and set the timer to 10 minutes.
Two: Lay the bread slices on a board and butter one side of each of the 4 slices.
Three: Turn two of the slices over and spread over the cranberry sauce.
Four: Lay the cooked turkey slices and cooked bacon rashers on top of the cranberry sauce.

Five: Lay over the brie slices.
Six: Top each sandwich with the other slice of bread, making sure the buttered side is on the outside (both outside slices should be buttered).
Seven: Air fry for 6 minutes then flip with tongs and air fry for a further 2-4 minutes.

🍴 Serving suggestions
Serve the turkey and brie toastie with air fryer sweet potato fries, oven-baked carrot fries, or air fryer corn on the cob.
📖 Variations
- Add in different meats like cooked chicken or leftover pigs in blankets.
- Swap the cranberry sauce for bread sauce or spicy chipotle.
- Serve with a roasted red pepper hummus dip.
- Add sliced avocado or lettuce.
- Make the turkey toastie in a frying pan if you don't have an air fryer.
- Try a turkey panini instead of a toastie.

- 4 Slices of White Bread
- 1 tablespoon Butter softened
- 1 tablespoon Cranberry Sauce
- 6 Turkey Slices
- 4 Bacon Rashers cooked
- 150 g Brie sliced
Instructions
- Preheat the air fryer to 180C (350F) and set the timer to 10 minutes.

- Lay over the brie slices.150 g Brie
