Slow cooker pork chops should be tender, juicy and full of flavour - not dry, tough or overcooked. Unfortunately, that's exactly how many crock pot pork chop recipes turn out, especially when very lean chops are cooked for too long.
This easy recipe is designed to avoid that problem. By choosing the right cut of pork, using the correct amount of liquid and cooking the chops gently, they stay beautifully moist and tender every time. There's no complicated preparation and no need to hover over the hob - just a simple, reliable dinner that suits busy weeknights.

🥘 Ingredients
A full ingredients list along with Metric and US Customary measurements, can be found in the recipe card at the end of this post.
Pork chops - thick-cut bone-in chops work best, but boneless pork steaks are fine if you prefer.
Garlic cloves - add for a punch of flavour.
Honey - clear, runny honey gives the nicest sweetness.
Ketchup - balances the sauce with a gentle tangy sweetness.
Soy sauce - adds savouriness; can be swapped for Worcestershire sauce if you prefer.
Parsley - chopped, to sprinkle on top for a fresh garnish.
Optional thickener - if you'd like a richer sauce, use a little cornflour slurry or thickening granules.

📖 Variations
- Sauce twists - try different flavour sauces with your slow cooker pork chops. Options include classic gravy, BBQ, ranch, creamy mushroom, cream of chicken, honey mustard, Asian-inspired soy & ginger, apple & sage, or tomato & herb.
- Spicy kick - add a teaspoon of hot chilli powder to the honey garlic sauce for a little heat.
- Meat swap - use lamb chops instead of pork, and replace the parsley garnish with freshly chopped mint for a fresh twist.
🔪 Instructions
How to cook pork chops in slow cooker
The recipe card with ingredient quantities and detailed instructions can be found at the bottom of the post
One: Place the pork chops in your slow cooker. if you have time you can quickly sear them, but this is not an essential step and mainly for aesthetics.
Two: Mix the garlic, honey, ketchup and soy sauce together and pour it over the pork chops.
Three: Cook on high for 4 hours ( or 6 hours on low). Thicken the sauce with a cornflour slurry or thickening granules if desired.
Four: Season with salt and pepper and garnish with parsley before serving.

Top Tips
- Choose the right cut - thick-cut, bone-in chops stay juicier and more tender, but boneless pork steaks also work. Avoid very lean, thin chops which can dry out easily.
- Optional sear for extra flavour - a quick browning in a hot pan before slow cooking gives a richer colour, but it isn't essential if you're short on time.
- Watch your cooking times - slow cooking on low yields the best results. Overcooking, even in a slow cooker, can make the pork dry, so stick to the suggested timings.
- Thicken the sauce at the end - for a glossy, rich finish, stir in a small cornflour slurry or a pinch of thickening granules just before serving.
🍴 Best sides for slow cooker pork chops
There are plenty of ways to serve these tender slow cooker pork chops. My favourite is with creamy mashed potatoes or crispy roast potatoes, alongside Yorkshire puddings and slow-cooked red cabbage.
Stir-fried green beans, roasted Brussels sprouts, or honey-glazed carrots and parsnips also make excellent accompaniments, while buttery savoy cabbage or a simple garden salad can add a lighter touch.
For a comforting, hearty meal, you could even serve them with buttered peas, cauliflower cheese, or carrot and swede mash - the choice is yours, depending on what you have to hand and how indulgent you're feeling.
Storage
Store - Allow the pork chops to cool slightly, then transfer to an airtight container. They will keep for up to 3-4 days.
Freeze - Place the pork chops and sauce in a freezer-safe container or heavy-duty freezer bag. They can be frozen for up to 2-3 months.
Reheating - Thaw frozen pork chops overnight in the fridge. Reheat gently in the oven or in a saucepan on low heat, spooning some of the sauce over the chops to keep them moist. Alternatively, microwave in short bursts until heated through.

❓ Frequently asked questions about slow cooker pork chops
It's best to thaw pork chops before cooking. Cooking from frozen can result in uneven cooking, where the centre stays cold for too long, and may affect both texture and flavour.
Aesthetically, there may be an argument in favour of browning, but there is no need to brown the chops before placing them in the slow cooker.
Yes! Adding vegetables like carrots, potatoes, onions, or celery makes a complete meal and helps keep the pork chops moist, as the vegetables release steam while cooking.
Troubleshooting Guide
| Problem | Fix |
|---|---|
| Pork chops turn out dry or tough | Use thicker, bone-in or slightly marbled chops rather than very lean cuts. Avoid overcooking past the recommended time. Ensure there's enough sauce or stock to keep the meat moist. |
| Sauce is too thin or watery | Thicken at the end with a cornflour slurry or thickening granules. Alternatively, remove the lid for the last 20-30 minutes to concentrate the sauce. |
| Pork chops stick to the slow cooker | Lightly grease the base and sides of the slow cooker before adding ingredients, or use a liner. Adding a bit of sauce to the bottom also helps prevent sticking. |

Hi Leigh. Glad you enjoyed it. I'd cook chicken breasts for 6 hours on low.

Did this last night and loved it. An hour before serving I added 150g of rice and 1 1/2 the volume of the rice in water and the whole dish was delicious. Much better than the boring lion steaks we were going to have and less work in a heat wave.
Julie says
Came out wonderful using boneless pork loin chops. Such a great tasting sauce & tender pork. Served with homemade Mac n Cheese & roasted Brussels sprouts.

Lindsey says
Can I replace ketchup with an alternative? I can't stand the stuff n if I know it's in recipe I won't eat it
Diane says
This came out really well. I was worried as the amount of sauce didn't seem that much and I thought it would simmer away during the cooking time. I cooked on low for six hours. It didn't at all & there was plenty of sauce. I add normal flour instead of corn flour as I'd run out & it thickened it perfectly. Super easy, tasty and definitely one I'll be making regularly!
