🛒 Ingredient notes
Butter - melted and used to cook the onion and pancetta. You could also use olive oil.
Onion - one small onion very finely chopped, or swap for 2 shallots.
Pancetta - or smoked bacon lardons.
Eggs - 6 large eggs, beaten.
Double Cream - for the egg custard mix.
Cheese - I've used grated Parmesan but you can also use Gruyere or mature cheddar.
Nutmeg - a pinch of freshly grated nutmeg provides a lovely depth of flavour.
Salt & Pepper - for seasoning.
🔪 How to make crustless quiche in air fryer

One: Preheat the air fryer to 180°C (350°F) and line a 20cm square or round baking tin with baking paper (use whichever tin shape fits in your air fryer basket the best).
Two: Melt the butter in a frying pan over medium heat and cook the chopped onion and pancetta for 6-7 minutes until the onion is soft and translucent.
Three: In a jug whisk together the eggs, double cream, Parmesan, and nutmeg. Mix in the cooked onion and bacon mix.
Four: Pour the egg mixture into the tin and air fry for 20-25 minutes until set. Allow it to cool for 10 minutes before slicing.

- Ensuring your air fryer is properly preheated to the right temperature is crucial. This guarantees your quiche starts cooking as soon as it hits the basket, resulting in a beautiful, even cook.
- Properly lining your baking tin with baking paper will prevent your quiche from sticking and make removal much easier.

- 150 ml Double Cream
- 50 g Parmesan grated
- Pinch of Nutmeg
