✔️ Why you'll love this recipe!
- Sometimes you fancy a small treat, but baking a whole batch of muffins can seem like too much hassle. With an air fryer, you can easily whip up a small batch (6) to satisfy your craving without the potential waste.
- Traditional oven baking often requires a muffin tin, but with an air fryer, you can utilise silicone or sturdy paper muffin cups placed directly in the fryer basket. Not only does this make clean-up a breeze, but it's also perfect if you're short on baking equipment.
- The unique cooking method of an air fryer creates a rapid hot air flow, which results in beautifully light and fluffy muffins. The outside becomes wonderfully crisp whilst the inside remains moist and airy.
- Air fryers heat up rapidly compared to conventional ovens, saving you both time and energy. Plus, they're perfect for the summer months when you want a baked treat but don't fancy heating up your entire kitchen with an oven.

🛒 Ingredient notes
Caster Sugar - You could also substitute it with granulated sugar if necessary.
Plain White Flour - The foundation for most muffin recipes, the flour can be replaced with wholemeal plain flour for a healthier alternative and nuttier flavour.
Bicarbonate of Soda - A crucial raising agent that helps the muffins rise and become fluffy.
Natural Yogurt - This ingredient brings moisture and slight tanginess to the muffins. Alternatives include creme fraiche, sour cream or buttermilk, which also serve to tenderise the gluten in the flour, providing a softer texture.
Eggs - Ideally at room temperature, the egg acts as a binder for the other ingredients.
Unsalted Butter - Best melted for this recipe, unsalted butter gives the muffins a rich, creamy flavour. If you wish, you could use a light oil such as vegetable oil as a substitute.
Vanilla Extract - A dash of high-quality extract significantly enhances the overall flavour of the muffins.
Fresh Blueberries - The star of the show, these add a burst of fruitiness and colour to your muffins. If fresh blueberries aren't available, frozen ones can also be used.
White Chocolate Chips - Good quality white chocolate chips or chunks add a creamy sweetness that contrasts beautifully with the tartness of the blueberries.
🔪 How to make muffins in air fryer
The recipe card with ingredient quantities and detailed instructions can be found at the bottom of the post
One: Preheat the air fryer to 160°C (320°F).
Two: Combine the dry ingredients (flour, bicarbonate of soda, and sugar) in a bowl.
Three: Whisk together the wet ingredients (melted butter, yogurt, egg, vanilla extract) and gently mix into the dry ingredients.
Four: Fold in the blueberries and white chocolate chunks.
Five: Spoon the muffin batter into 6 sturdy muffin cases, place in the air fryer basket, and air fry for 13-15 minutes until golden brown.
Top Tips
- Always preheat the air fryer before baking to get it up to the correct temperature.
- Overmixing can lead to tough muffins. Just mix until the dry and wet ingredients are combined. A few lumps here and there are completely fine and actually desirable for tender, fluffy muffins.
- This might sound trivial, but using ingredients that are at room temperature can help to achieve a uniform texture throughout your muffins. Cold ingredients do not combine as well and can result in a denser texture.
- To ensure even cooking, don't overcrowd the air fryer. The hot air needs space to circulate around each muffin. Depending on the size of your air fryer, you might need to bake in batches.
- Baking times can vary based on different models of air fryers. Start checking your muffins a few minutes before the suggested baking time to avoid overbaking. A toothpick inserted into the middle of a muffin should come out clean or with just a few crumbs attached.
🍴 Serving suggestions
Here are some serving suggestions:
- Coffee or Tea: Muffins are a classic partner for a hot cup of coffee or tea. My kids love them with a glass of cold milk too.
- Fruit Salad: Serve your muffins with a side of fresh fruit salad. The bright, crisp flavours of the fruit will cut through the richness of the muffins, creating a balanced and refreshing breakfast or brunch.
- Ice Cream: For a decadent dessert, serve your muffins warm with a scoop of ice cream. Vanilla would be a classic choice, but you could also opt for flavours like caramel, white chocolate, or even blueberry to echo the ingredients in the muffins.
📖 Variations
- For a tangy twist, try making cranberry orange muffins. Simply substitute the blueberries for fresh or frozen cranberries and add in some orange zest.
- Swap out the blueberries for raspberries and chopped strawberries for a burst of berry flavour. You can also add in some almond extract for a nutty undertone.
- Replace the blueberries with grated apple and add a teaspoon of cinnamon to your dry ingredients. These muffins will taste like a delicious apple pie.
- Add a crunchy sweet topping by sprinkling demerara sugar over each muffin before baking.
- Double the recipe to make 12. You'll need to air-fry them in two batches though!
🥡 Storage
Storing your muffins properly is essential to keep them fresh and delicious. Here are the best ways to store your air fryer muffins:
Store - After the muffins have completely cooled, place them in an airtight container or a resealable bag and store at room temperature. They will stay fresh for up to 2 days.
Freeze - For longer-term storage, you can freeze the muffins. Wrap each muffin individually in cling film or place them in a freezer bag, squeezing out as much air as possible. They can be frozen for up to 3 months. To eat, simply defrost at room temperature or in the microwave if you prefer them warm.
❓ Frequently asked questions
You can use silicone or paper muffin cups in an air fryer. It;s best to double up paper cases to make them more sturdy.
Firstly, check that your raising agent is in date or that you haven't forgotten to use it. Secondly, don't let the muffin batter sit for too long before air frying.
Tough muffins result from over mixing of the muffin batter. Mix the dry and wet ingredients separately first before mixing them together. Be gentle and it doesn't matter if the batter is a bit lumpy. Gently fold in additional ingredients like fruit, chocolate chips and nuts.
If your muffins are browning too quickly but are still not cooked in the middle, you can lower the temperature of your air fryer and increase the cooking time. Remember, every air fryer is a bit different, so it might take a bit of experimenting to find the perfect temperature and timing for your machine.
Yes, of course. If you don't have an air fryer, you can bake the muffins in a preheated oven. Use my recipe for oven-baked blueberry and white chocolate muffins!
