A quick and easy air fryer crustless quiche Lorraine recipe! Perfect for breakfast, brunch, or lunch.

This classic French dish is made with eggs, bacon, cheese, and cream and is usually baked in a pastry crust. However, this version is crustless, which makes it lower in carbs and calories, and perfect for those who are following a gluten-free or keto diet.

Making crustless quiche Lorraine in an air fryer is a great way to get a crispy crust and perfectly cooked filling in just a few minutes.

The air fryer uses hot air to circulate around the food, which means you don't need to use any oil or butter to cook the quiche. Plus, it's much faster than baking it in the oven, which makes it a great option for busy mornings or when you're short on time.

✔️ Why you'll love this recipe!

    • This crustless quiche Lorraine recipe still has all the classic flavours of a traditional quiche Lorraine, but without the added calories from the pastry crust.
    • Cooking quiche in the air fryer is also quicker than cooking it in the oven. It takes around 20-25 minutes to cook a quiche in the air fryer, compared to 45-60 minutes in the oven
    • The air fryer gives the quiche a crispy top and perfectly cooked filling.
    • Making your own quiche is always best. Not only is it more delicious, but it's also healthier and more affordable than store-bought options. Plus, it's easy to make and can be customised to your liking.

    🛒 Ingredient notes

    Ingredients for crustless quiche lorraine.

Butter - melted and used to cook the onion and pancetta. You could also use olive oil.

Onion - one small onion very finely chopped, or swap for 2 shallots.

Pancetta - or smoked bacon lardons.

Eggs - 6 large eggs, beaten.

Double Cream - for the egg custard mix.

Cheese - I've used grated Parmesan but you can also use Gruyere or mature cheddar.

Nutmeg - a pinch of freshly grated nutmeg provides a lovely depth of flavour.

Salt & Pepper - for seasoning.

🔪 How to make crustless quiche in air fryer

The recipe card with ingredient quantities and detailed instructions can be found at the bottom of the post

One: Preheat the air fryer to 180°C (350°F) and line a 20cm square or round baking tin with baking paper (use whichever tin shape fits in your air fryer basket the best).

Two: Melt the butter in a frying pan over medium heat and cook the chopped onion and pancetta for 6-7 minutes until the onion is soft and translucent.

Three: In a jug whisk together the eggs, double cream, Parmesan, and nutmeg. Mix in the cooked onion and bacon mix.

Four: Pour the egg mixture into the tin and air fry for 20-25 minutes until set. Allow it to cool for 10 minutes before slicing.

    Top Tips

    • Ensuring your air fryer is properly preheated to the right temperature is crucial. This guarantees your quiche starts cooking as soon as it hits the basket, resulting in a beautiful, even cook.
    • Properly lining your baking tin with baking paper will prevent your quiche from sticking and make removal much easier.
    • Each air fryer can vary slightly in temperature and power. Keep an eye on your quiche towards the end of the cooking time to ensure it doesn't overcook.
    • After your quiche is cooked, let it rest for a few minutes before slicing. This allows it to firm up, making it easier to cut into neat slices.

    🍴 Serving suggestions

Serve the quiche for breakfast or brunch with a simple green side salad.

If you're serving it for lunch or a main meal, a side of air fryer chips or roasted sweet potato is good!

    📖 Variations

    • For a meat-free version, omit the bacon and substitute with cooked mushrooms or baby spinach. Chopped peppers would also work well.
    • Add extra cheese to the recipe or switch up the type of cheese used. Gruyere or cheddar are great options.
    • Incorporate smoked salmon and fresh dill into your quiche mixture for a luxurious, brunch-worthy treat.
    • Swap Parmesan for goat cheese and top your quiche with cherry tomatoes for a tart and tangy variation.
    • Add fresh herbs such as thyme or chives to the egg mixture for an extra burst of flavour.
    • Pair fresh asparagus spears with nutty Gruyère cheese for a springtime variation.
    • Use a muffin tin to create individual quiches that are perfect for picnics.

    🥡 Storage

Store - If you have any leftovers, you can store them in the fridge for up to three days. To store your quiche, simply place it in an airtight container or wrap it tightly in cling film.

Reheat - When you're ready to enjoy your quiche again, you can reheat it in the microwave or the air fryer. You can also eat it straight from the fridge.

Freeze - The crustless quiche can be frozen for up to 3 months.
