Chicken chasseur, affectionately known as 'Hunter's Chicken' in English (but not the same as Hunter's chicken you find in restaurants in the UK), is a classic dish rooted in the rich culinary traditions of France.
The name 'chasseur' is derived from the French term for 'hunter', symbolising the age-old practice of hunters cooking their game in this manner.
The dish is renowned for its distinctive blend of chicken slowly cooked in a hearty tomato and mushroom sauce, with white wine and aromatic herbs for an added depth of flavour.

Chicken Thighs - 8 boneless skinless chicken thighs, or swap for boneless chicken breasts if you prefer.
Onion - 1 brown onion, peeled and chopped.
Garlic - 4 garlic cloves finely chopped.
Carrots - 2 carrots, peeled and diced.
Mushrooms - I like to use 200g of button mushrooms but you can swap for closed-cup mushrooms or chestnut mushrooms if you prefer.
Herbs - You'll need a bay leaf and dried mixed herbs (herbs de Provence), or just use thyme. Rosemary would also work well.
Tomato Puree - to add richness to the dish.
White Wine - or use vermouth. If you prefer not to use wine, just add more chicken stock.
Chopped Tomatoes - 400g tin of chopped tomatoes.
Chicken Stock - Made with a stock pot or stock cube.
Seasoning - sea salt and pepper.
🔪 How to make chicken chasseur in slow cooker

One: Place the chopped vegetables in the bottom of the slow cooker basin.
Two: Place the chicken thighs on top.
Three: Mix together the chopped tomatoes, chicken stock, white wine, tomato puree, herbs, and salt and pepper in a jug and pour over the chicken and vegetables.
Four: Cook on high for 4 hours (low for 7) with the lid off for the last hour of cooking. To thicken the sauce you can use thickening granules (1-2 tbsp), a cornflour slurry (mix 1 tablespoon of cornflour with 1 tablespoon of the sauce in a small bowl until a paste forms, then whisk it into the sauce and wait for it to thicken), or gravy granules.

- If you're using wine in your recipe, opt for a dry white one. Remember, never cook with wine that you wouldn't drink!
