Looking for a delicious and easy slow cooker chicken recipe? Try this slow cooker chicken chasseur combining tender, juicy chicken thighs with a rich sauce made from tomatoes, white wine, mushrooms, carrots, onions, and garlic.
Mix together the chopped tomatoes, chicken stock, white wine, tomato puree, herbs, and salt and pepper in a jug and pour over the chicken and vegetables.
400 g Chopped Tomatoes, 2 tablespoon Tomato Puree, 100 ml White Wine, 100 ml Chicken Stock, 1 Bay Leaf, 3 teaspoon Dried Mixed Herbs, Salt and Pepper
Cook on high for 4 hours (low for 7) with the lid off for the last hour of cooking. Notes
Variations:
While chicken thighs are traditionally used, you could also choose chicken breast or drumsticks. Be mindful of cooking times, as leaner cuts may dry out quicker.
Adding a variety of vegetables can improve the dish's nutritional value and enhance the flavour profile. Root vegetables such as parsnips and potatoes complement the dish well.
Use red wine for a richer tasting sauce.
Swap dried herbs for fresh herbs. Thyme, rosemary, and oregano work well.
