One: Place the sliced Bramley apples, sliced pears, ground ginger, cinnamon, and light brown sugar in a heavy-based pan. Add 1 tablespoon of water and cook on a medium heat for 5 minutes until the fruits start to soften (stir frequently to prevent the fruit from sticking to the bottom of the pan).
Two: Make the crumble topping by placing the plain flour, oats, light brown sugar, and crystalised ginger in a bowl and pouring over the melted butter. Mix with a spoon until crumbles form.
Three: Spoon the fruit into a 2 litre pie dish and then top with the crumble.
