    Easy Microwave Lemon Sponge Pudding Recipe

    This is my go-to recipe when I need a quick and easy dessert! It's much easier than making a traditional steamed pudding because it's cooked in the microwave.

    Beat the sponge ingredients together in a bowl, pour it into a buttered microwave-safe dish, microwave for 3 minutes on high, then top with warm lemon curd!

    Use my recipe for homemade lemon curd (also made in the microwave!), or buy a jar of good quality lemon curd from the supermarket.

    🛒 Ingredient notes

    Ingredients for microwave lemon curd pudding.

    Sugar - a combination of light brown sugar and caster sugar.

    Butter - unsalted and softened.

    Eggs - 2 large eggs at room temperature.

    Flour - self-raising flour. If you only have plain flour you will need to add baking powder to it (1 teaspoon per 100g of flour).

    Lemon Zest - from an unwaxed lemon.

    Lemon Curd - homemade or shop-bought.

    🔪 Instructions

    One: Mix together the sponge ingredients (butter, sugars, eggs, flour, lemon zest) in a large bowl until combined.

    Two: Pour the batter into a greased 1-litre pudding basin or microwaveable safe baking dish and level the top with a palette knife.

    Three: Microwave on high for 3 minutes.

    Four: Heat the lemon curd in the microwave for 30-40 seconds until warm and runny. Pour onto the sponge and serve.

    Top Tips

    • Ensure your ingredients are at room temperature before beginning the recipe.
    • Use an electric whisk or stand mixer to beat the sponge batter together, to make it even more speedy (the only downside is you end up with more washing up!).
    • Grease the baking dish generously to prevent the sponge from sticking to the sides.

    📖 Variations

    • Use different flavour fruit curds. Orange curd would work well.
    • Add 100g of white chocolate chips to the sponge batter for sweetness.
    • Make a chocolate sponge pudding and replace 30g of flour with cocoa powder and swap the lemon curd for chocolate sauce or ganache.
    • Make this quick lemon pudding in individual ramekins instead of one large baking dish. Reduce the cooking time in the microwave accordingly.
    • Bake the lemon sponge pudding in the oven instead of cooking it in the microwave.

    🥡 Storage

    Store - The microwave sponge pudding is best eaten fresh. Leftovers can be stored in an airtight container in the fridge for up to 3 days.

    Reheat - Reheat in the microwave until warm.

    Freeze - Freeze leftovers for up to 3 months. Defrost at room temperature before reheating in the microwave.

    How long is homemade lemon curd good for?

    Lemon curd will keep in an air-tight container in your fridge for up to four weeks. It can also be frozen.
