    🛒 Ingredient notes

Ingredients for air fryer fruit scones.

Flour - self raising flour is best for scones.

Baking Powder - helps the scones rise and become light and fluffy.

Butter - cold and cubed. Unsalted is best.

Sugar - caster sugar or use granulated sugar.

Milk - whole milk and a bit extra for glazing the tops of the scones.

Lemon Juice - sours the milk and helps to achieve a fluffy textured scone.

    Vanilla Extract - for flavour.

    Raisins - or use sultanas.

🔪 How to make fruit scones in air fryer

The recipe card with ingredient quantities and detailed instructions can be found at the bottom of the post

Butter and flour in a bowl.

One: Rub the cubed butter into the flour and baking powder until you get a fine breadcrumb consistency.

    Sugar in a bowl.

Two: Stir in the caster sugar.

A jug of milk and lemon juice.

Three: Heat the milk in the microwave for 30 seconds then add a squeeze of lemon juice and the vanilla extract. Leave to stand for 2 minutes.

Milk added to dry ingredients for scone dough.

Four: Stir the soured milk mixture into the dry ingredients until you get a wet sticky dough.

    Raisins added to scone dough.

    Five: Stir in the raisins.

Scone dough on a wooden board.

Six: Bring the dough together with your hands. The dough will be quite sticky and soft at this stage. Lightly flour your work surface then shape the scone dough into a round disc (roughly 3cm thick) using your hands. Using a 5cm fluted cookie cutter, stamp out 5 scones. You'll need to keep reforming the dough into a disc with your hands until you have used it all up.

Seven: Glaze the tops of the scones with milk and place in the air fryer.

Eight: Air fry for 7-8 minutes until golden brown and well risen.

    Top Tips

    • Always use cold cubed butter straight from the fridge. If you try to rub in soft warm butter you will be left with a sticky mess. Cold butter helps to keep the dough cool and gives the scones the perfect flakey texture once baked.
    • You don't need a rolling pin to roll out the dough. Just shape it with your hands into a disc shape. The more sparingly you handle the dough, the better the end result. To prevent gluten formation (resulting in tough and chewy scones), it is best to refrain from kneading the dough.
    • Try not to twist the cutter when stamping out the scones. This helps them to rise evenly.
    • Make sure your self-raising flour and baking powder are in date to ensure the scones rise.

    🍴 Serving suggestions

Serve the fruit scones warm with a generous dollop of your favourite jam and clotted cream.

For a simpler yet delicious option, spread a little butter on a warm scone and drizzle with honey or golden syrup. Lemon curd is a tasty option too!

    📖 Variations

    • Swap the vanilla extract for cinnamon or mixed spice.
    • Mix in a generous handful of chocolate chips for a sweet, indulgent treat.
    • Add dried cranberries and orange zest to your dough for a bright, tangy flavour.

    🥡 Storage

Air fryer fruit scones are best eaten fresh, as soon as they are made.

Store - Leftovers can be stored in an airtight container for up to 2 days.

Reheat - Scones can be eaten at room temperature, but can also be warmed up. Air fry for 1 - 2 minutes at 200°C.

Freeze - Allow the scones to cool before placing them in a freezer bag or freezer-safe container. Freeze for up to 3 months. Defrost at room temperature before serving.

    ❓ Frequently asked questions

How can one ensure scones rise and stay fluffy when using an air fryer?

To ensure your scones rise and stay fluffy, use cold butter and mix it into the flour until it resembles fine breadcrumbs. Avoid overworking the dough, and preheat your air fryer to provide an immediate blast of heat which helps them to rise.

Can I use frozen fruit in my scones?

Absolutely! Frozen fruit works well in scone recipes. Just make sure to add it straight from the freezer without thawing to prevent the dough from becoming too wet.

How do I know when the scones are done?

Your scones are done when they're golden brown on the outside and a toothpick inserted into the centre comes out clean or with a few crumbs attached. Cooking times may vary slightly depending on your air fryer model, so it's always good to check a bit early.
