UK readers will be familiar with the smell of the famous Greggs bacon and cheese wraps wafting down their local high street, and my copycat recipe is not only tastier, but also frugal and filling too.
The cheese and bacon turnovers are perfect for feeding starving children in that awkward after-school, before-dinner time slot, and they are also a great post-pub snack for adults too!

🥘 Ingredients
Puff Pastry - buy ready-rolled puff pastry for ease but feel free to make your own if you have the time.
Bacon - grill the smoked back bacon rashers for a few minutes on each side so that they become really crispy when baked in the pastry (and you can ensure they are cooked through). If you use thin streaky bacon you don't need to grill them beforehand as they will cook at the same time as the puff pastry.
Cheese - grated extra mature cheddar is my cheese of choice in these turnovers, but any hard cheese would work well. Double Gloucester cheese would give them a real colour boost!
Egg - the egg wash helps the pastry stick together and also gives the turnovers that gorgeous golden colour when they are baked in the oven.
Dijon Mustard - an optional extra, but one that really complements the cheese and helps to make them taste even MORE cheesy!
🔪 Instructions

One: Preheat the oven to 200°c (180 fan/ 400F/ Gas 6) and line a large baking sheet with baking paper.
Two: Cut the puff pastry sheet into 6 equal squares with a sharp knife. Lay them on the diagonal as shown in the picture below.
Three: If you are using the Dijon mustard, spread ¼ of a teaspoon onto the middle of each piece of pastry then top with the bacon (I grill the bacon rashers first for a few minutes so they go really crispy when baked in the puff pastry) and grated cheese.
Four: Brush the egg wash around all sides of the pastry them fold up one corner into the middle, followed by the other corner before pinching the two pieces together with your finger and thumb (this will stop them coming apart when baked).
Five: Brush all of the turnovers with egg wash then bake them in the oven for 18 minutes until golden and crispy. Cool on the baking sheet for a few minutes before eating.
Top Tips
- Use a ready-rolled puff pastry sheet. Shop-bought puff pastry is really good quality and is already rolled to a uniform thickness, something that is difficult to do at home.
- The optional Dijon mustard gives the turnovers a lovely flavour boost, but you might prefer to leave it out if you're serving the turnovers to young children.
- Leave the turnovers to cool for a few minutes on the baking tray, before handling them, to help them crisp up and prevent burning your fingers.
🍴 Serving suggestions
The cheese and bacon turnovers are a perfect after-school snack for kids, or could even be served for a quick and easy lunch with sides such as baked beans, apple coleslaw, air fryer sweet potato fries or carrot fries.
📖 Variations
This is a very simple recipe to make, but why not experiment with different flavourings? Here are a few ideas;
- Spread a teaspoon of caramelised onion chutney or roasted red pepper hummus onto each piece of pastry before laying on the bacon rasher. You could also try red pesto with a splash of balsamic vinegar.
- Make the turnovers vegetarian by using Quorn 'bacon' style rashers.
- Vary the cheeses used! Any hard cheese that can be grated would work well, or how about spreading cream cheese or soft cheese on the puff-pastry before placing the bacon slice on top?
- Sprinkle sesame seeds or poppy seeds over the turnovers before baking. The egg wash will help them stick to the pastry.
🧊 Suitable for freezing?
The turnovers can be baked, cooled, and then frozen for up to 3 months. Store in an airtight freezer-safe container, between layers of non stick parchment paper. Reheat straight from the freezer in a hot oven (200°c).

The first recorded instance of turnovers was in 1440 in response to an edict preventing bakers from making cakes, so instead they resorted to making pies of all kinds, and this, in turn, led to the creation of the turnover!
Turnovers are best eaten fresh from the oven, but leftovers can be stored in the fridge and reheated. Microwaving them is not recommended as it will make the pastry soggy. Instead, reheat them in a hot oven or air fryer for a few minutes.
The number of calories will depend on the recipe and the size of the turnover. Pastry, bacon, and cheese are all high in fat, so cheese and bacon turnovers are not considered diet food.
