🛒 Ingredient notes
Butter - unsalted butter.
Sugar - use a combination of caster sugar and light brown sugar for the best texture.
Chocolate - a good quality dark chocolate (70% cocoa solids), chopped into small pieces.
Eggs - 5 large eggs at room temperature.
Flour - plain flour.
Cocoa Powder - a good quality cocoa powder and not drinking chocolate.
Mint Chocolate - I used Mint Aero Bubbles, but you could use other mint chocolate such as After Eights. Freeze the mint chocolate for at least 1 hour.
Topping - dark chocolate and more mint aero bubbles.
🔪 Instructions

One: Place the butter and sugars in a large saucepan and melt on a low heat, stirring often.
Two: Take off the heat and stir in the dark chocolate pieces until they have melted.
Three: Beat in the eggs.
Four: Fold in the plain flour and cocoa powder. Allow the mixture to cool for 5 minutes.
Five: Mix in the frozen mint aero bubbles.
Six: Pour the brownie mixture into the prepared tin and bake for 30 minutes until just set.
Seven: Allow the brownie to cool in the tin.
Eight: Melt the dark chocolate for the topping, drizzle over the top and add more chopped mint Aero bubbles. Cut into squares and serve.
Top Tips
- It's essential to freeze the Mint Aero bubbles for at least an hour before baking to prevent them from melting and losing their shape. However, the bubbles for the top don’t need to be frozen.
- Also, be sure to grease and line the baking tin to keep the brownies from sticking.
🍴 Serving suggestions
Serve the mint Aero brownies with a glass of milk or a cup of tea!
They're also great for festive gatherings and parties. They always make an appearance at our Boxing Day buffet, alongside my puff pastry sausage rolls, Christmas tiffin, Christmas star biscuits, and cranberry and white chocolate blondies!
📖 Variations
- Add crushed candy canes to the topping for a more festive mint chocolate brownie.
- Add chopped nuts for crunch. Pecan nuts are nice.
- Stir through dried cranberries, chocolate chips or raisins.
- Use other mint chocolate! After Eight mints work well in a layer.
- For extra mint flavour add a drop of mint extract.
🥡 Storage
Store - the brownies will keep in an airtight container for up to 5 days.
Freeze - place the brownies in a freezer-safe container and freeze for up to 3 months.

- 30 x 20 cm Baking Tin
- Baking Paper
Ingredients
- 225 g Butter unsalted
- 300 g Caster Sugar
- 150 g Light Brown Sugar
- 150 g Dark Chocolate broken into pieces
- 5 Eggs large
- 110 g Plain Flour
- 50 g Cocoa Powder
- 184 g Mint Aero Bubbles frozen for at least 1 hour
For the topping
- 100 g Dark Chocolate melted
- 70 g Mint Aero Bubbles chopped
Instructions
- Preheat the oven to 180°C (160 fan/ 350F/ Gas 4) and grease and line a 30 x 20cm baking tin.
- Place the butter and sugars in a large saucepan and melt on a low heat, stirring often.225 g Butter, 300 g Caster Sugar, 150 g Light Brown Sugar
- Take off the heat and stir in the dark chocolate pieces until they have melted.150 g Dark Chocolate
- Beat in the eggs.5 Eggs
- Fold in the plain flour and cocoa powder. Allow the mixture to cool for 5 minutes.110 g Plain Flour, 50 g Cocoa Powder
- Mix in the frozen mint aero bubbles.184 g Mint Aero Bubbles
- Pour the brownie mixture into the prepared tin and bake for 30 minutes until just set. Cool in the tin.
- Drizzle over the melted dark chocolate and scatter over the chopped mint Aero bubbles. Cut into bars when the topping has set.100 g Dark Chocolate, 70 g Mint Aero Bubbles
Notes
- It's really important to freeze the mint Aero bubbles for at least an hour before making the recipe, to ensure they don't completely melt and lose shape when baked. The mint Aero bubbles for the top do not need to be frozen.
