    An easy recipe for crispy mini hasselback potatoes made with new potatoes or baby potatoes!

    A super simple potato side dish that's so versatile, and best of all so tasty! You might also like my duck fat roast potatoes recipe!

    • Potatoes - use small new potatoes or baby potatoes.
    • Olive Oil - for roasting.
    • Sea Salt - for seasoning.

    🔪 How to make Hasselback potatoes

    One: Wash, scrub and dry the potatoes then place each one on a wooden spoon and use a sharp knife to cut slices at 3mm intervals. The slightly raised edges of the wooden spoon will stop the knife going all the way through.

    Two: Place the potatoes in a baking tray or roasting tray and drizzle with olive oil and sprinkle with sea salt.

    Three: Bake in the oven for 45-50 minutes until golden brown and crispy.

    💭 Expert tips

    • If the potatoes are very round, cut a small slice off one side so they rest on the wooden spoon flat and level.
    • Use the sharpest knife you have and cut at intervals of 3mm to get the crispiest potatoes.

    🍴 Serving suggestions

    Serve the mini hasselback potatoes in place of your usual roast potatoes for Sunday lunch.

    They're also nice with creme fraiche chicken, pork stroganoff, and savoury mince.

    You can even serve them as an appetizer with a garlic and herb dip!

    • Be more adventurous with the seasonings. Try smoked paprika, cayenne pepper, garlic powder, thyme, or rosemary!
    • Sprinkle over grated cheddar cheese or Parmesan for the last 10 minutes of cooking to make cheesy hasselback potatoes.
    • Sprinkle over crispy bacon pieces at the end of cooking.
    • Grate over lemon zest for lemon hasselback potatoes.
    • Make spicy hasselback potatoes and sprinkle over dried chilli flakes at the end of cooking.
    • Make a creamy version and top the cooked potatoes with sour cream and chives.

    Store: Best eaten fresh, but leftovers can be stored in an airtight container in the fridge for up to 3 days.

    Reheat: In a hot oven or air fryer to retain crispness.

    Why are they called hasselback potatoes?

    The name Hasselback comes from a restaurant in Stockholm, Sweden, called Hasselbacken, where the recipe for Hasselback potatoes was first created in the 1950s.

    Easy Mini Hasselback Potatoes

    Ingredients

    Metric - US Customary
    • 750 g New Potatoes
    • 3 tablespoon Olive Oil
    • 1 teaspoon Sea Salt

    • Preheat the oven to 200°c (180 fan/ Gas 6).

      omg, genius! these cooked up SO much more quickly than regular potatoes and were so crispy! We seved them with a little sour cream and bacon bits....so GOOD!
