These fun and colourful smarties cookies are adapted from our favourite chocolate chip cookie recipe and are one of the kids' favourite bakes to make on a rainy day!
You just can't beat biting into one of these delicious biscuits and finding a sweet chocolate smartie nugget.
To keep things interesting, I've used a mixture of milk chocolate smarties and white chocolate smarties to keep everyone guessing!

🛒 Ingredient notes
Butter - unsalted butter that has been softened. You can use salted butter, but leave out the ¼ teaspoon of sea salt.
Sugar - use a mixture of soft light brown sugar and white caster sugar for the perfect chewy texture.
Egg - one large egg at room temperature.
Vanilla Extract - use a good quality extract and not vanilla essence.
Flour - white plain flour (all-purpose flour).
Bicarbonate of Soda - helps with the 'chewy on the inside, crisp on the outside' texture!
Salt - ¼ teaspoon sea salt to help balance the sweetness.
Smarties - three-quarters of the smarties go into the cookie dough, with the remaining smarties pressed into the top of each cookie.
🔪 Instructions

One: In a large bowl cream together the softened butter and sugars until pale and fluffy.
Two: Beat in the egg and vanilla extract.
Three: Mix in the flour, bicarbonate of soda and sea salt.
Four: Gently fold in three-quarters of the smarties.
Five: Use a tablespoon to take small scoops of the mixture, roll them into balls with your hands, and place them on lined baking trays spaced well apart. This mixture should make about 24 cookies. Press the rest of the smarties on top.
Six: Bake in the oven for 12 minutes until lightly golden.
Top Tips
- Be careful not to overbake the cookies. They will still be slightly soft to the touch when they come out of the oven, but will firm up on cooling.
- Keep a few smarties back to press into the cookies 2 minutes before the end of cooking. That way they will retain their bright colours better.
🍴 Serving suggestions
The smartie cookies are great for an afternoon snack with a glass of milk or a cup of tea.
You can also sandwich two cookies together with honeycomb ice cream for a quick and easy ice cream sandwich dessert!

- Swap the smarties for M&M's, chocolate chips, raisins, or chopped mini eggs!
- Make chocolate smarties cookies by replacing 25g of flour with cocoa powder.
- Add the zest of half an orange for extra flavour.
- Drizzle the baked cookies with melted white chocolate for special occasions.

Store - The smarties cookies will keep in an airtight container for up to 3 days.
Freeze - Once cool, the cookies can be frozen for up to 3 months. Defrost at room temperature before serving.

- 150 g Unsalted Butter
- 80 g Light Brown Sugar
- 80 g Caster Sugar
- 2 teaspoon Vanilla Extract

- 225 g Plain Flour

- 200 g Smarties
Instructions
- Preheat the oven to 190°C (170fan/ 375F/ Gas 5) and line 2 large baking trays with baking paper.
