    Easy Melting Moments Recipe

    Crisp on the outside, and soft on the inside, these easy melting moments are super simple to make and even easier to eat!

    A traditional and nostalgic British biscuit which are rolled in porridge oats and topped with a glace cherry! Perfect with a cup of tea or glass of milk.

    I first made melting moments in my food technology class in the early 90's, and I haven't stopped making them since!

    They are the perfect bake for getting kids involved in the kitchen and taste delicious too!

    🛒 Ingredient notes

    Ingredients for melting moments.
    • Butter - unsalted and softened.
    • Caster Sugar - or use granulated sugar.
    • Egg - one large egg at room temperature.
    • Vanilla Extract - use a good quality extract and no essence.
    • Flour - you'll need self-raising flour which has the raising agent added.
    • Oats - use ordinary rolled oats and not jumbo or quick cook oats.
    • Glace Cherries - halved with a sharp knife.

    🔪 How to make melting moments biscuits

    One: In a large bowl cream together the butter and sugar until light and fluffy.

    Two: Beat in the egg and vanilla extract.

    Three: Fold in the flour.

    Four: Roll walnut size balls of biscuit dough into balls then roll in the oats. Place on a lined baking tray and top with a halved glace cherry. Bake in the oven for 12 minutes until golden.

    💭 Expert tips

    • Make sure all of the ingredients are at room temperature before beginning the recipe.
    • Space the biscuits out on the baking tray as they spread when baked. You'll need two large baking trays lined with baking paper.

    📖 Variations

    • Instead of using oats, swap for crushed cornflakes.
    • Add the zest of a lemon to the biscuit dough for extra flavour.
    • Top the biscuits with chocolate buttons instead of cherries.

    Ingredients

    Metric - US Customary
    • 200 g Butter softened
    • 100 g Caster Sugar
    • 1 Egg
    • 1 teaspoon Vanilla Extract
    • 250 g Self Raising Flour
    • 50 g Oats
    • 8 Glace Cherries

    Instructions

    • Preheat the oven to 180°c (160 fan/ Gas 4) and line 2 large baking trays with baking paper.
    • In a large bowl cream together the butter and sugar until light and fluffy.
      200 g Butter, 100 g Caster Sugar
    • Beat in the egg and vanilla extract.
      1 Egg, 1 teaspoon Vanilla Extract
    • Fold in the flour.
      250 g Self Raising Flour
    • Roll walnut size balls of biscuit dough into balls then roll in the oats.
      50 g Oats
    • Place on a lined baking tray and top with a halved glace cherry. Bake in the oven for 12 minutes until golden.
