I first made melting moments biscuits in my food technology class in the early 90s, and I haven't stopped making them since!

Butter - unsalted and softened.
Caster Sugar - or use granulated sugar.
Egg - one large egg at room temperature.
Vanilla Extract - use a good quality extract and not essence.
Flour - self-raising flour which has the raising agent added.
Oats - use ordinary rolled oats (porridge oats) and not jumbo or quick cook oats.
Glace Cherries - halved with a sharp knife.
🔪 How to make melting moments biscuits

One: In a large mixing bowl cream together the butter and sugar with a wooden spoon until light and fluffy.
Two: Beat in the egg and vanilla extract.
Three: Fold in the flour.
Four: Roll walnut size pieces of biscuit dough into round balls then roll them in the oats. Place the biscuits on a lined baking tray and top each one with a halved glace cherry. Bake in the oven for 12 minutes until light golden brown.
Top Tips
- Ensure all ingredients are at room temperature before starting the recipe for optimal mixing and texture.
- Arrange the biscuits with ample space on the baking tray, as they will spread during baking. You'll need two large baking trays lined with nonstick baking paper.
- Avoid overbaking the biscuits; this can lead to an undesirably crunchy texture. Keep a close watch as they bake and remove them from the oven as soon as they are lightly golden brown.

- Substitute rolled oats with crushed cornflakes or desiccated coconut for a different texture and flavour.
- Enhance the biscuit dough by adding the zest of a lemon for a refreshing citrus twist.

Store - Place the biscuits in an airtight container and store them at room temperature for up to 5 days.
Freeze - Once cooled, place the biscuits in a freezer-safe container and freeze for up to 3 months. To defrost, simply remove the biscuits from the freezer and allow them to thaw at room temperature for 30 minutes.
