    This simple pork and apple casserole is one of our favourite cold-weather comfort food meals. It's hearty, warming, and very filling!

    🛒 Ingredient notes

    Ingredients for pork and apple casserole.

    Pork - use diced pork shoulder steaks for the best taste and texture.

    Onion - a brown onion, peeled and finely chopped.

    Garlic - two fat garlic cloves, minced or finely chopped.

    Carrots - two medium carrots, peeled and cut into 2cm pieces

    Mushrooms - I like to use chestnut mushrooms, but closed-cap or button mushrooms can also be used. If you don't like mushrooms, just leave them out and add more carrots!

    Herbs - fresh thyme and bay leaves, or use a bouquet garni.

    Apples - use a tart eating apple such as Granny Smith. You can use Bramley apples but they will go quite mushy on cooking.

    Chicken Stock - made from a stock pot or stock cube.

    Dijon Mustard - adds flavour to the dish. You could use wholegrain mustard instead.

    Cider Vinegar - intensifies the apple flavour.

    Salt & Pepper - for seasoning.

    Double Cream - makes the casserole lovely and creamy.

    Thickening Granules - or a cornflour slurry. Most major supermarkets stock thickening granules (usually near the cornflour). You can also buy them on Amazon.

    🔪 How to make pork casserole in slow cooker

    The recipe card with ingredient quantities and detailed instructions can be found at the bottom of the post

    One: Place the onion, garlic, carrots, mushrooms, pork, apples, bay leaves, and thyme in the slow cooker basin. In a jug whisk together the chicken stock, dijon mustard and cider vinegar and pour it over the pork and vegetables. Season with salt and black pepper.

    Two: Slow cook for 7-8 hours on a low setting. Remove the lid for the last hour of cooking to help thicken the sauce.

    Three: Stir in 2 tablespoons of thickening granules (or use a cornflour slurry) and mix into the casserole. Add more thickening granules if you would like a thicker sauce.

    Four: Add the cream and stir to combine. Serve with mash and vegetables.

    Top Tips

    • If you have time, you can brown the pork first. I never have time to do this and I don't think it makes much of a difference in flavour or texture.
    • Garnish with fresh parsley at the end of cooking.

    🍴 Serving suggestions

    Serve the pork and apple casserole with any of the following;

    • Air Fryer Jacket Potato
    • Rice
    • Crusty Bread
    • Duck Fat Roast Potatoes
    • Carrot and Swede Mash
    • Air Fryer Green Beans
    • Air Fryer Broccoli Parmesan
    • Root vegetables such as roasted swede

    📖 Variations

    • Add chopped red or orange peppers to the casserole.
    • Use creme fraiche or sour cream instead of double cream.
    • Add a tablespoon of tomato puree (tomato paste) for a richer flavour.
    • Stir in crispy bacon lardons at the end of cooking for extra flavour.
    • Swap fresh thyme for dried thyme, or use rosemary.
    • Add a tin of cannellini beans or butter beans for extra protein.
    • Add some dumplings to the top of the casserole!

    🥡 Storage

    Store - Leftovers can be kept in an airtight container in the fridge for up to 2 days.

    Reheat - Microwave until piping hot, or reheat on the hob.

    Freeze - Once cool, place leftovers in a freezer-safe container and freeze for up to 3 months. Defrost in the fridge before reheating.

    ❓ Frequently asked questions

    Can you put raw pork in a slow cooker?

    It's completely safe to add raw pork (and any raw meat) to a slow cooker. Just make sure the pork has reached 75C at the end of cooking.

    Should I brown my pork before slow cooking?

    It's not necessary to brown the pork before slow cooking. However, if you have time, it will make the pork look more appealing at the end of cooking. As for flavour, some people say it makes a difference, but in my opinion, it's not enough of a difference to bother with.
