🥘 Ingredients

- Garlic and Herb Boursin - 1 x 150g packet of garlic and herb Boursin cheese at room temperature. Boursin melts really well, which makes it perfect for this creamy pasta recipe.
- Bacon - smoked bacon gives the dish a wonderful smoky salty flavour that contrasts so well with the creamy soft cheese sauce.
- Garlic - adds loads of flavour. Use extra garlic cloves if you love your food really garlicky!
- Parsley - the green speckles of finely chopped fresh parsley give the dish a wonderful freshness.
- Italian Hard Cheese - Parmesan or Grana Padano, finely grated.
- Pasta - spaghetti or any pasta of your choice.
🔪 Instructions

One: Cook the pasta according to packet instructions, reserving 1 cup of pasta water when draining the pasta. Meanwhile, in a frying pan, fry the chopped smoked bacon and the chopped garlic in a little olive oil for a few minutes until the bacon is cooked.
Two: Add the Boursin cheese and half the cup of reserved pasta cooking water and stir with a wooden spoon to combine.
Three: Keep adding more water until you reach your desired sauce consistency.
Four: Toss the cooked pasta through the sauce and add in the chopped parsley and grated hard cheese.

💭 Top tips
- Adding the starchy pasta water helps to emulsify the sauce and make it silky smooth.
- Sprinkle with red pepper flakes before serving for a delicious flavour boost.
- Ladle the water out of the pasta pan before draining the pasta (otherwise you might forget to save it and it will run down the drain!).
- Boil the pasta in salted water. An Italian cook once told me pasta water should be as salty as the Mediterranean!
- The recipe can easily be doubled to feed 4.
🍴 Serving suggestions
Serve the boursin pasta with a green salad or green vegetables such as roasted tenderstem broccoli or asparagus.
For something a bit more substantial, serve with garlic butter chicken strips and pesto focaccia!
📖 Variations
- Make it vegetarian by leaving out the bacon and adding chopped sun-dried tomatoes, cherry tomatoes, and toasted pine nuts.
- Up the veggies with a handful of frozen peas or frozen sweetcorn added to the pasta water.
- Add a finely chopped red onion and cook with the garlic.
- A splash of white wine before you add the boursin cheese will give the pasta dish a lovely rich flavour.
- Drizzle the finished dish with extra-virgin olive oil and sprinkle with finely grated lemon zest.
- Swap the Boursin for soft creamy goat cheese or soft blue cheese.
- Add leftover roast chicken, prawns, or air fryer salmon.
- Swap the herbs and use basil or dill instead of parsley, or a combination of different fresh herbs.

Store: The creamy boursin pasta is best eaten fresh, but leftovers can be put in an airtight container and kept in the fridge for up to 3 days
Reheat: Reheat in the microwave until piping hot.
Freeze: The recipe isn't suitable for freezing.

Boursin cheeses are made with pasteurised milk and are therefore safe to eat during pregnancy.
Its soft texture means it melts really easily and is perfect for creating creamy sauces.
Once opened, Boursin cheese will last for up to two weeks in the fridge.

Creamy Boursin Pasta
Ingredients
- 200 g Pasta of your choice
- 1 tablespoon Olive Oil
- 4 Smoked Bacon Rashers chopped
- 1 Garlic Clove peeled and chopped
- 150 g Garlic and Herb Boursin Cheese
- 50 g Grana Padano grated (or use Parmesan)
- 2 tablespoon Parsley finely chopped
Instructions
- Bring a pan of salted water to the boil and cook the pasta according to packet instructions. Reserve a cup of pasta water before draining.
- Meanwhile, heat 1 tablespoon of olive oil in a frying pan and cook the bacon and garlic on a medium heat, until the bacon is cooked.
- Add the Boursin cheese and half the reserved cooking water to the bacon mix and stir until the Boursin is melted. Add more water until you get the consistency of sauce you like.
- Stir in the drained pasta and mix to coat the pasta in the sauce.
- Add the grated grana padano (or Parmesan) and freshly chopped parsley, season and serve.
