Frittata's are one of my go to lunches when I'm working from home. They're so simple to make and great for using up eggs, vegetables, cheese and even cooked meats.
This courgette and feta frittata is one of my favourite flavour combinations, especially when combined with roasted red peppers and spring onions, which add colour and texture to the dish.

🥘 Ingredients
- Eggs - this recipe uses 8 eggs and we always try to use free-range.
- Milk - a small amount of milk adds a lightness to the frittata.
- Courgettes - 1 medium courgette (zucchini) halved and sliced.
- Feta - I love the salty taste of feta and it goes great with courgettes. Alternatively, you could use grated halloumi or even cheddar cheese.
- Roasted Red Peppers - 1 roasted red pepper from a jar, or use a fresh red bell pepper.
- Spring Onions - a small bunch adds lots of flavour. You could substitute for red onion if you prefer.
- Thyme - I've used dried thyme in this recipe but by all means use fresh herbs if you have them to hand. Parsely and mint would both work well. For fresh herbs up the quantity to 2 tablespoons.

One: In a large frying pan cook the courgettes, spring onions, roasted red pepper and thyme for 3-4 minutes until tender.
Two: Whisk together the eggs, milk, salt, and pepper in a jug and pour the mixture into the frying pan. Give it a quick stir to distribute the vegetables evenly and cook for 4-5 minutes.
Three: Whilst the frittata is cooking on the hob, preheat the grill. Sprinkle the cubed feta cheese on top of the frittata and place under the grill for 2 more minutes of cooking, until it is nicely set. keep an eye on it to make sure it doesn't get too brown.
💭 Top tips
- Use a frying pan that is oven-safe as the frittata is finished under the grill.
- Cold frittata slices are easily transportable so why not pack a slice in the kids lunchboxes?

Courgette and feta frittata is delicious eaten on its own for a protein-packed lunch.
We sometimes have it for dinner with salad, air fryer sweet potato fries and homemade Focaccia.

The great thing about frittata is that you can mix and match what you put in it, depending on what ingredients you have in your fridge.
- Fresh baby spinach, peas and sweetcorn would add more veggie goodness.
- Fresh herbs like mint and parsley would add colour to the dish.
- Try using different cheeses such as halloumi, goat's cheese, or grated cheddar.
- For a more substantial frittata, add leftover cooked pasta.
- Leftover cooked meat such as chicken, sausages or pork could also be added to the frittata.
🥡 Storage
Frittatas can be eaten fresh, as soon as they are made. They can also be sliced, stored in the fridge for up to 3 days, and eaten cold in lunchboxes and on picnics.
Frittata slices can be frozen for up to 3 months. Wrap in a double layer of foil to protect it from freezer burn.

Courgettes and zucchinis are the same vegetable but are called different things depending on where you live in the world. In the UK, they are known as courgettes, but in the US, they are called zucchini.
A frittata is cooked slowly over a low heat while an omelet is cooked quickly over higher heat. Omelets are served hot straight from the stove, whereas frittatas are often served at room temperature or cold, making them perfect for picnics and lunchboxes.
Courgettes contain very few calories and have a high water content, which makes them perfect for people following a low calorie diet. They also provide useful amounts of vitamin C, and significant levels of potassium.

Ingredients
- 8 Eggs large, free range
- 15 ml Milk
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
- 1 tablespoon Oil
- 1 Courgette medium size, halved and sliced
- 5 Spring Onions sliced
- 1 Roasted Red Pepper (from a jar), chopped (or use a fresh red pepper instead)

- 200 g Feta cut into cubes
