✔️ Why you'll love this recipe!

Here's why this is the best corned beef hash recipe!

    1. Uses pantry staples including canned corned beef.
    2. Eggs are cooked in the same pan.
    3. Hearty brunch or dinner recipe.
    4. Cheap and frugal.
    5. Delicious with brown sauce!

    🛒 Ingredient notes

    Ingredients for corned beef hash.

Corned Beef - canned corned beef is best for this recipe. Simply dice into cubes.

Potatoes - use a white floury potato such as Maris Piper. You'll need to peel, dice and boil the potato before frying it in the pan. You could use leftover parmentier potatoes as they are a similar shape and size.

    Onion - chopped finely.

    Garlic - adds flavour.

Oil - olive oil or vegetable oil can be used.

Worcestershire Sauce - adds a distinch savoury flavour to the dish.

Eggs - I've adapted an old family recipe that served fried or poached eggs on top of the corned beef hash, to incorporate the eggs into the frying pan.

    Parsley - for garnish.

Salt and Pepper - for seasoning.

🔪 How to make corned beef hash

The recipe card with ingredient quantities and detailed instructions can be found at the bottom of the post

One: Place the diced potatoes in a large pan of salted water and bring to the boil. Cook for 6-8 minutes until the potato cubes are tender and cooked (test with a sharp knife). Drain the potatoes in a colander and set aside to steam dry.

Two: Heat the oil in large frying pan and cook the onion and garlic over a medium heat until soft and translucent. Stir in the Worcestershire sauce.

Steps 1 and 2 of making the corned beef hash.

Three: Turn the heat up to medium high and add the potatoes, diced corned beef, and press down with a spatular or potato masher so you have one layer. Cook for 5 minutes until crispy. Use a spatula to turn the hash over in segments and cook for a further 3 minutes.

Four: Make 4 wells in the frying pan using a spoon, and break an egg into each well. Place a lid over the pan and cook the hash for a further 3-4 minutes until the egg is cooked (runny yolk is best!). Season with salt and pepper before serving (and sprinkle with chopped parsley if you like).

💡 Pro Tip: If you don't have a lid for your frying pan, just pop the pan under the grill for a minute to ensure the eggs are cooked on top.

    Top Tips

    • Season the water you cook the potatoes in very well. This will ensure the dish is well seasoned.
    • Make sure the potatoes are completely dry before adding them to the frying pan, to ensure they crisp up nicely. You'll need to let them steam dry in a colander for at least 5 minutes!
    • Use a non stick frying pan or cast iron skillet to cook the hash.

    🍴 Serving suggestions

Serve the corned beef hash on warm plates with homemade baked beans for a filling brunch!

It's also a quick and easy weekday dinner served with cabbage, asparagus or air fryer broccoli.

    📖 Variations

    • Try using diced sweet potatoes instead of white potatoes.
    • Like your food spicy? Serve the corned beef hash with sriracha chilli sauce or a pinch of cayenne pepper.
    • Use diced spam instead of corned beef.
    • Try making slow cooker corned beef hash.

    🥡 Storage

Store - place leftovers in an airtight container and store in the fridge for up to 2 days.

Reheat - in the microwave until piping hot.

Freeze - not suitable for home freezing.

    ❓ Frequently asked questions

    What is corned beef?

Corned beef is meat that has been cured in a salt solution. In the UK it is most usually available in cans.

Why is canned corned beef opened with a key?

Canned corned beef was issued to soldiers on the front line during the last world war. The key made it easy to open the can without a can opener.
