This quick and easy baked tortellini is made with only 7 ingredients and is on the table in less than 30 minutes!
It's cheesy, creamy, and there is no need to pre-cook the tortellini pasta, making it the perfect dish for busy weeknights when time is short! You might also like my cheesy slow cooker tortellini too!

So, I'm going to put my hand's up here and tell you I've cheated a little bit and used a ready made pasta sauce, but we all need a little help every now and again!
But seriously, this easy cheesy baked tortellini is so simple to make! All that you have to do is mix the ingredient's in a bowl, spoon into a baking dish and top with the cheese, simple as that! It bakes in 25 minutes, so dinner is on the table in under half an hour.
This baked pasta really has been my saviour on many a night when the kids are starving!

🥘 Ingredients

- Fresh Tortellini Pasta - I used 4 cheese tortellini but any fresh stuffed pasta would work well. Why not try spinach and ricotta or chicken and bacon if you like things meaty!
- Pasta Sauce - I cheated and used a ready-made creamy tomato pasta sauce.
- Double Cream - creates the most wonderful velvety smooth pasta sauce. You could substitute with crème fraiche if you prefer.
- Smoked Sausage - adds a flavour and meatiness to the dish, but just leave it out if you're vegetarian. Instead, you could add chopped sun-dried tomatoes, tinned sweetcorn or sliced cooked Quorn sausages.
- Fresh Basil - gives the baked tortellini a heady herby scent and ups the flavour!
- Mozzarella - you can't have pasta without cheese, and sliced buffalo mozzarella adds that all-important gooeyness.
- Parmesan - finely grated Parmesan sprinkled on top of the dish before baking creates a wonderful cheesy crust to the tortellini pasta bake.
🔪 Instructions

1. Place the pasta sauce and double cream in a bowl and give it a mix.
2. Stir in the fresh tortellini.
3. Add the sliced smoked sausage and mix until combined.
4. Tear in fresh basil leaves.

5. Spoon the pasta into a baking dish (1.5 litres capacity) and top with the mozzarella and Parmesan.
6. Bake in the oven for 25 minutes until the tortellini is cooked and the sauce bubbling.

💭 Top tips
- If you like your pasta baked with a golden crispy top, just pop the baked tortellini under the grill for 1-2 minutes once it has finished in the oven. Keep an eye on it to make sure it doesn't burn.
- Make sure your baking dish is an adequate size for the pasta bake. I always place the baking dish on a baking tray so that if any sauce does bubble up, the tray catches it and I don't have to clean the oven (worst job ever!).
- Take 5 minutes in the morning to assemble the pasta bake and leave it in the fridge whilst you go about your day. Once everyone is home from school and work, all you need to do is pop it straight in the oven!
🍴 Serving suggestions
The baked tortellini is delicious with a crisp green salad and homemade pesto focaccia or garlic bread.
📖 Variations
- Vary the tortellini you use. I like spinach and ricotta or smoked ham. Just make sure you use fresh pasta.
- Up the veggies by adding chopped roasted red peppers, sun-dried tomatoes or drained tinned sweetcorn.
- Stir in a spoon of sun-dried tomato pesto to give the dish a flavour boost.
- Instead of mozzarella, why not try topping the baked pasta with grated cheddar instead.
- Stir through leftover roast chicken, gammon or even chorizo into the pasta bake. It's a great dish for using up leftovers.
- Try using a creamy carbonara pasta sauce instead of a tomato pasta sauce.

🥡 Storage
Store: The cooked baked pasta can be stored in the fridge for up to 2 days and reheated in the microwave.
Freeze: Alternatively, leftovers can be frozen in a freezer-safe container. Defrost in the fridge and reheat in the microwave until piping hot.
❓ FAQS
Fresh pasta will cook in the oven without the need to pre-cook it, as long as it is covered in a sauce to prevent it from burning.
Dried pasta can be used in this pasta recipe but will need to be pre-cooked first.

30 Minute Baked Tortellini

- 500 g Pasta Sauce I used creamy tomato
- 100 ml Double Cream
- 300 g Fresh Tortellini I used four cheese
- 160 g Smoked Sausage sliced
- 10 g Basil torn (a small handful)
- 125 g Ball of Mozzarella drained and sliced
- 50 g Parmesan grated
Instructions
- Preheat the oven to 180°C (160 fan/ 350F/ Gas 4).
- In a large mixing bowl stir the pasta sauce and double cream together until combined.
- Add in the fresh tortellini, sliced smoked sausage and torn basil leaves and stir until the sauce has coated all of the ingredients.
- Spoon the pasta into a baking dish and top with the sliced mozzarella and grated Parmesan.
- Bake in the oven for 25 minutes.
