🛒 Key Ingredients

A full ingredients list along with Metric and US Customary measurements, can be found in the recipe card at the end of this post.
- Fresh Tortellini Pasta - I used a 4 cheese tortellini, but any fresh stuffed pasta works beautifully. Try spinach and ricotta for a lighter option, or chicken and bacon if you prefer something meatier.
- Pasta Sauce - A good-quality, ready-made creamy tomato pasta sauce keeps things quick and convenient while still delivering great flavour.
- Double Cream - Adds richness and creates a luxuriously smooth, velvety sauce. You can swap it for crème fraîche for a slightly lighter finish.
- Smoked Sausage - Brings a delicious smoky flavour and heartiness to the dish. For a vegetarian version, simply leave it out or replace with sun-dried tomatoes, sweetcorn, or sliced cooked vegetarian sausages.
- Fresh Basil - Adds a pop of colour and a fresh, aromatic lift to balance the creamy sauce.
- Mozzarella - Essential for that irresistible gooey, melted topping-buffalo mozzarella works especially well.
- Parmesan - A final sprinkle of finely grated Parmesan creates a golden, crisp, and flavour-packed cheesy crust as it bakes.

📖 Variations
- Switch up the tortellini - Spinach and ricotta or smoked ham are great alternatives. Just be sure to use fresh tortellini so it cooks perfectly in the oven.
- Add extra veggies - Boost the flavour and texture with roasted red peppers, sun-dried tomatoes, or drained sweetcorn.
- Enhance the sauce - Stir through a spoonful of sun-dried tomato pesto for a deeper, richer flavour.
- Change the cheese topping - Swap mozzarella for grated cheddar or try crumbled blue cheese for a stronger, more indulgent finish.
- Up the leftovers - Stir through leftover roast chicken or gammon into the pasta bake. It's a great dish for using up leftovers.
- Try a different sauce - For a twist, use a creamy carbonara-style sauce instead of tomato for an extra-rich variation.
🔪 How to make creamy tortellini bake
One: Place the pasta sauce and double cream in a bowl and give it a mix.
Two: Stir in the fresh tortellini.
Three: Add the sliced smoked sausage and mix until combined.
Four: Tear in fresh basil leaves.

Five: Spoon the pasta into a baking dish (1.5 litres capacity) and top with the mozzarella and Parmesan.
Six: Bake in the oven for 25 minutes until the tortellini is cooked and the sauce is bubbling.

Top Tips
- Use fresh tortellini - It cooks perfectly in the sauce and gives the best texture.
- Don't overbake - Bake just until the cheese is melted and golden to keep the sauce creamy.
- Choose a good-quality pasta sauce - It makes a big difference to the overall flavour.
- Cover if needed - If the top is browning too quickly, loosely cover with foil.
- Let it rest before serving - A few minutes helps the sauce thicken and makes serving easier.
- Season to taste - Depending on your sauce and cheese, you may want to add a little salt and pepper before baking.
🍴 Serving suggestions
The oven baked tortellini is delicious with a crisp green salad and homemade pesto focaccia or crispy garlic bread.
It's also great with a side of freshly cooked vegetables such as roasted Tendestem broccoli, or air fryer asparagus.

Storage
Store - The baked tortellini pasta can be stored in the fridge for up to 2 days and reheated in the microwave.
Freeze - Leftovers can be frozen in a freezer-safe container. Defrost in the fridge and reheat in the microwave until piping hot.
❓ Creamy Baked Tortellini Pasta FAQs
Fresh pasta will cook in the oven without the need to pre-cook it, as long as it is covered in a sauce to prevent it from burning.
Dried pasta can be used in this pasta recipe but will need to be pre-cooked first.
Yes, frozen tortellini can be used but you may need to add a few minutes to the cooking time.
Yes, you can assemble the dish ahead of time and refrigerate it until you're ready to bake it.
Troubleshooting Guide
Tortellini still firm after baking - The pasta needs enough liquid to cook properly. Make sure it's fully coated in sauce before baking.
Sauce too thick - Add a splash of milk or a little extra cream before baking, or stir some through halfway if it looks dry.
Top browning too quickly - Loosely cover with foil and remove it for the final few minutes to finish the golden topping.
