    Easy Puff Pastry Tarts

    Quick and easy puff pastry tarts made with a sheet of ready-rolled puff pastry!

    Just 5 simple ingredients are needed to make these delicious pesto, mozzarella, and tomato tarts. You can vary the toppings too, depending on what you've got in.

    The easy savoury puff pastry tarts are super simple and quick to make. They're a regular feature in our weekly meal plans, especially in the summer months when tomatoes are in season.

    🛒 Ingredient notes

    • Puff Pastry - a 375g sheet of ready rolled puff pastry will make 4 good size tarts.
    • Pesto - I used green pesto, but you could use red pesto, tomato paste, or even caramelised onion chutney.
    • Tomatoes - large beef tomatoes cut into slices.
    • Mozzarella - I used grated mozzarella, but buffalo mozzarella, crumbled feta, goats cheese, or even grated cheddar or parmesan could be used.
    • Basil - for garnish (parsley would also work).

    🔪 How to make savoury puff pastry tarts

    One: Lay the pastry out on a board and cut it in half horizontally and then half vertically, so you are left with 4 equal rectangles. Using a sharp knife score a 1cm border around each tart.

    Two: Spread each pastry rectangle with pesto.

    Three: Top with the sliced tomatoes.

    Four: Sprinkle over the grated mozzarella and bake in a hot oven for 15 - 20 minutes until golden and bubbling.

    💭 Expert tips

    • Use a heavy-duty baking sheet lined with baking paper for baking the tarts to prevent them from sticking to the tin.
    • For extra crispy golden brown pastry, brush the tarts with an egg wash prior to baking.
    • Leave the tarts to cool on the baking sheet for 5 minutes, before removing them to a wire rack.
    • Always keep a sheet of ready-rolled puff pastry in your freezer so you're never too far away from one of these delicious tarts.

    🍴 Serving suggestions

    Serve the savoury tarts with a side salad and fresh crusty bread. Easy 5 bean salad, or courgette and feta salad are both delicious options.

    📖 Variations

    • Vary the toppings to suit what you like. How about a cream cheese and asparagus tart, or a goat cheese and caramelised onion tart?
    • Lay slices of pepperoni pizza on top of the tarts to make a puff pastry pizza.
    • Make a sweet dessert version with fresh berries, lemon curd and maple syrup. Serve with vanilla ice cream (or my no-churn honeycomb ice cream) or creamy custard. Strawberry tarts are one of our favourite summer desserts.

    Make-Ahead: Assemble the tarts up to 24 hours before you want to bake them and chill in the fridge until needed.

    Store: The puff pastry tarts are best eaten fresh from the oven, but they can also be eaten at room temperature or reheated.

    Reheat: Reheat in a hot oven for 5 minutes. Don't microwave the tarts as the pastry will go soggy.

    Yes, just use a gluten-free puff pastry.

    Do you blind bake puff pastry for a tart?

    No, there is no need to blind bake the puff pastry first in this recipe.

    Ingredients

    Metric - US Customary
    • 375 g Ready Rolled Puff Pastry
    • 4 tablespoon Pesto
    • 4 Tomatoes sliced
    • 75 g Grated Mozzarella
    • Basil to garnish

    Instructions

    • Preheat the oven to 220°c (200 fan/ Gas 7) and line a large baking sheet with baking paper.
    • Lay the pastry out on a board and cut it in half horizontally and then half vertically, so you are left with 4 equal rectangles. Using a sharp knife score a 1cm border around each tart. Lay the rectangles on the baking sheet.
      375 g Ready Rolled Puff Pastry
    • Spread each pastry rectangle with pesto.
      4 tablespoon Pesto
    • Top with the sliced tomato.
      4 Tomatoes
    • Sprinkle with grated mozzarella.

      Hi

      I followed this recipe for a lunchtime tart using a full sheet of puff pastry but with the border as instructed. I used mozzarella and tomatoes and parsley and pesto as instructed but I used up some thick halibut flaked fish I had left and then added a tiny bit of fried garlic and fresh parsley instead of basil.

      Always follow the cooking instructions for the puff pastry you bought, mine took slightly longer.
