    Easy Strawberry Coulis

    An easy 3-ingredient strawberry coulis recipe that can be made with fresh or frozen strawberries.

    Perfect for stirring through yogurt, drizzling on pancakes and waffles, or eating with ice cream!

    🛒 Ingredients

    Ingredients for strawberry coulis.
    • Strawberries - I use fresh strawberries in the summer and frozen strawberries out of season. Both work well.
    • Lemon - the juice of half a lemon is needed in the recipe, but you could also use the zest of the lemon to make it even more lemony.
    • Icing Sugar - only a small amount is needed to sweeten the coulis.

    1. Place the washed, hulled and quartered strawberries in a saucepan and simmer on a medium heat for 10 minutes. Stir regularly to avoid the strawberries from sticking to the bottom of the pan.
    2. Use a stick blender (or food processor) to puree the strawberry mixture to a smooth sauce like consistency.
    3. Press the coulis through a fine sieve (over a large bowl) for an extra smooth and silky strawberry coulis sauce.

    💭 Top tips

    • Taste the strawberries before pureeing them, and adjust the sweetness if necessary. If you want the coulis to be sweeter stir through a little more icing sugar and whisk to dissolve.
    • If using frozen berries there is no need to defrost them first.

    🍴 Serving suggestions

    There are so many ways to use strawberry coulis. Here are some ideas!

    • Stir through Greek yogurt, granola, or porridge (oatmeal) for breakfast.
    • Drizzle over waffles, pancakes, buttermilk pancakes, and french toast.
    • Swirl through vanilla cheesecake.
    • Spoon over vanilla or honeycomb ice cream.
    • Spread on scones in place of jam and top with clotted cream and fresh strawberries.

    📖 Variations

    • Try using different fruits such as raspberry, blackberries or blackcurrants.
    • Use orange or lime juice instead of lemon
    • Add the zest of the lemon (or other citrus fruit) to the coulis for a sharper flavour.
    • Make a double batch and freeze half.

    🥡 Storage

    The cooled strawberry coulis can be kept in the fridge for up to 5 days. I keep it in a sterilised jar or in an air-tight container.

    The coulis can also be frozen. Allow it to cool fully before placing in a freezer-safe container.

    What is coulis?

    Coulis is a sauce made from puréed soft fruits or vegetables. Fruit coulis is most commonly used as an accompaniment to hot or cold desserts or breakfast.

    How do I thicken fruit coulis?

    Fruit contains natural pectin, which means you should not need to thicken the coulis. Coulis should be a sauce-like pourable consistency. Coulis will continue to thicken on cooling, so if it seems a little runny when first made, it will soon thicken up once cool.

    Ingredients

    Metric - US Customary
    • 400 g Strawberries washed, hulled and quartered
    • 25 g Icing Sugar
    • ½ Lemon juice only

    Instructions

    • Place the strawberries, icing sugar, and lemon juice in a pan and simmer on a medium heat for 10 minutes, stirring often.
    • Blend to a smooth sauce using a stick blender or food processor.
    • Place a metal sieve over a bowl and press the strawberry coulis through the sieve.
    • Spoon or pour the coulis into jars or an air-tight container and store in the fridge.

    Top Tips:

      I've never made a coulis before, I didn't realize how simple it was! Definitely going to try this out on top of some pancakes for a breakfast treat!
