    Easy Prawn Chow Mein

    ✔️ Why should you try it?

    🥘 Ingredients

    Ingredients for making prawn chow mein.
    • King Prawns (shrimp) - I use cooked frozen king prawns that have been defrosted in the fridge.
    • Sesame Oil - for stir-frying.
    • Garlic
    • Ginger
    • Stir Fry Vegetables - a combination of chinese cabbage, mangetout, carrots, and peppers.
    • Beansprouts - add a lovely crunch.
    • Spring Onions - for garnish.
    • Homemade chow mein sauce - a combination of oyster sauce, ketchup, and light soy sauce.
    • Egg Noodles - cooked as per packet instructions, drained and set aside.

    🔪 Instructions

    One: Mix the chow mein sauce ingredients together in a bowl.

    Two: Heat the sesame oil in a wok or frying pan and fry the ginger and garlic for 2 minutes.

    Three: Add the vegetables and beansprouts and stir fry for 3-4 minutes.

    Four: Stir in the cooked king prawns.

    Five: Add the cooked noodles and chow mein sauce.

    Six: Mix everything together, warm through, and serve with the sliced spring onions as garnish!

    💭 Top tips

    • Keep the heat high. This dish is cooked high and fast!
    • To save time, cook the dried egg noodles the night before and store them in the fridge until needed. If you can find fresh egg noodles that don't require cooking, then go ahead and use those.
    • Use a pre-prepared stir fry vegetable pack to save time chopping.

    📖 Variations

    • Use different vegetables! Mushrooms, baby corn, broccoli, and water chestnuts all work well.
    • Like things spicy? Add 1 chopped red chilli at the same time as the garlic and ginger.
    • Use raw king prawns if you prefer. Fry them with the vegetables until they change colour to bright pink.
    • Swap the prawns for another protein sauce. Firm tofu or chicken both work well in this chow mein dish.

    🥡 Storage

    Prawn chow mein is best eaten fresh, straight from the wok.

    Leftovers can be kept in the fridge for up to 3 days and reheated in the microwave (the veggies will lose their crunch and texture though).

    ❓ FAQs

    Can you freeze prawn chow mein?

    Prawn chow mein is best eaten fresh and therefore I wouldn't recommend freezing it.

    Is chow mein healthy?

    Chow mein noodles prepared in sesame oil with lots of vegetables and lean protein (such as prawns) is low in calories and high in vitamins and minerals. Pack in as many veggies as you can manage!

    Easy Prawn Chow Mein

    Equipment

    • Chopping Board
    • Knife
    • Wok
    • Wooden Spoon

    Ingredients

    Metric - US Customary
    • 3 Egg Noodle Nests
    • 2 Garlic Cloves peeled and chopped
    • 1 tablespoon Fresh Ginger peeled and finely chopped
    • 200 g Stir Fry Vegetables sliced cabbage, peppers, mangetout, mushrooms, and baby corn all work well
    • 150 g Beansprouts
    • 350 g Cooked King Prawns defrosted if frozen
    • 3 Spring Onions sliced

    Chow Mein Sauce

    • 3 tablespoon Light Soy Sauce
    • 2 tablespoon Oyster Sauce
    • 2 tablespoon Tomato Ketchup

    Instructions

    • Cook the noodles according to packet instructions, drain and set aside. You can do this the day before and store in the fridge.
    • Mix together the chow mein sauce ingredients in a small bowl.
    • Heat the sesame oil in a large wok and fry the garlic and ginger on a high heat for 2 minutes.
    • Add the vegetables and beansprouts and fry for 3-4 minutes. Keep moving the vegetables around the pan so they cook evenly.
    • Mix in the king prawns, cooked noodles and stir fry sauce.
    • Warm through, season with salt and pepper (you wont need much salt due to the soy sauce), and serve with the sliced spring onions.

      I would have never thought to add ketchup in my chow mein! These noodles turned out so flavorful and I loved the how loaded with veggies it was. Looking forward to trying some of your other recipes!
