Quick and easy sticky sausage tray bake with roasted vegetables, Bramley apple, and a honey mustard glaze – a one-pan, family-friendly dinner perfect for busy weeknights.
In a jug mix together the balsamic vinegar, honey and mustard and season with salt and pepper. Pour over the sausages and vegetables. Give everything a final stir before baking in the oven for 35 minutes.
Take the tray out of the oven and give it a shake. Cover with foil and return to the oven for 10 more minutes or until the sweet potato is cooked through. Squeeze the garlic out of their skins before serving.
Notes
Use thick, meaty pork sausages to avoid overcooking; chipolatas may burn.
Cut sweet potatoes into bite-size pieces for even cooking and cover the tray with foil for the last 10 minutes to prevent burning.
The recipe is versatile: swap in new potatoes, other roastable vegetables, or chicken/vegetarian sausages, and it’s freezer-friendly for up to 3 months.
