Instructions
Place the Greek yogurt into a mixing bowl and stir in the lemon curd and fruit coulis.
500 g Greek Yogurt,
3 tablespoon Lemon Curd,
1 tablespoon Fruit Coulis
Fold in half of the fresh blueberries.
50 g Blueberries
Spoon the yogurt mixture into 12 silicone cases.
Top with the remaining fresh blueberries.
50 g Blueberries
Freeze for 2 hours before eating. Store in the freezer.
Notes
Use honey instead of lemon curd and fruit coulis, to sweeten the yogurt.
Try different fruits such as raspberries, blackberries and strawberries.
Add a handful of granola for crunch and texture.
