Nutella Blondies

Dense, soft, and fudgy, these easy Nutella Blondies take just a few minutes to throw together and will definitely fix your sugar craving! Delicious on their own or served with ice cream, you are not going to want to miss this recipe!

Ingredients

  • 200 g Butter melted
  • 125 g Caster Sugar
  • 125 g Light Brown Sugar or use dark brown sugar
  • 2 Eggs
  • 2 teaspoon Vanilla Extract
  • 275 g Plain Flour
  • 100 g White Chocolate Chips
  • 180 g Mini Peanut Butter Cups or use peanut butter chips
  • 125 g Nutella softened in a microwave for 10 seconds

Instructions

  • Preheat the oven to 180°C (160 fan/ 350F/ Gas 4) and line a small brownie tin or 20cm square baking tin with baking paper.
  • Melt the butter in a large microwave safe bowl. Beat in the caster sugar and light brown sugar until pale and fluffy (this should take 3-4 minutes).
  • Mix in the eggs.
  • Add the flour and vanilla extract and mix until combined.
  • Stir through the mini peanut butter cups and chocolate chips.
  • Spoon the mixture into the prepared tin.
  • Melt the nutella for 10 seconds in the microwave and dollop spoonful's onto the top of the blondie mix. Use a skewer to create swirls in the mixture.
  • Bake in the oven for 30 minutes and allow to cool completely before cutting into squares. I recommend placing them in the fridge (1 hour) or freezer (30 minutes) to help them set and make cutting easier.

Top tips:
  • The hardest part about making these blondies is leaving them long enough to cool. To speed up the process I recommend placing them in your freezer for 30 minutes or your fridge for an hour, before cutting them into bars.
  • To get those clean-cut lines, make sure the blondies are cool, and use a long sharp knife to cut them. Wipe the knife clean (be careful when doing this!) between each cut.
 
Variations:
  • Use plain chocolate spread instead of Nutella.
  • If you can't get hold of mini peanut butter cups, use peanut butter chips instead, or just up the quantity of chocolate chips.
  • Use a mixture of white, milk, and dark chocolate chips.
  • Once baked, scatter the top with crushed salted peanuts for added crunch and texture.
  • Use dark brown sugar instead of light brown sugar for a darker, richer flavour to the Nutella blondies.
 
Freezing: The Nutella blondies can be frozen for up to 3 months.
