Easy Smartie Cookies

An easy smartie cookies recipe perfect for kids! Chewy in the middle, crisp on the outside, and stuffed full of colourful chocolate smarties!

Ingredients

  • 150 g Unsalted Butter
  • 80 g Light Brown Sugar
  • 80 g Caster Sugar
  • 2 teaspoon Vanilla Extract
  • 1 Egg
  • 225 g Plain Flour
  • ½ teaspoon Bicarbonate of Soda
  • ¼ teaspoon Salt
  • 200 g Smarties

Instructions

  • Preheat the oven to 190°C (170fan/ 375F/ Gas 5) and line 2 large baking trays with baking paper.
  • In a large bowl cream together the softened butter and sugars until pale and fluffy.
    150 g Unsalted Butter, 80 g Light Brown Sugar, 80 g Caster Sugar
  • Beat in the egg and vanilla extract.
    2 teaspoon Vanilla Extract, 1 Egg
  • Mix in the flour, bicarbonate of soda and sea salt.
    225 g Plain Flour, ½ teaspoon Bicarbonate of Soda, ¼ teaspoon Salt
  • Gently fold in three-quarters of the smarties
    200 g Smarties
  • Use a tablespoon to take small scoops of the mixture, roll them into balls with your hands, and place them on lined baking trays spaced well apart. This mixture should make about 24 cookies. Press the rest of the smarties on top.
  • Bake in the oven for 12 minutes until lightly golden.

Notes

Expert Tips:
  • Be careful not to overbake the cookies. They will still be slightly soft to the touch when they come out of the oven but will firm up on cooling.
  • Keep a few smarties back to press into the cookies 2 minutes before the end of cooking. That way they will retain their bright colours better.
 
Variations:
  • Swap the smarties for M&M's, chocolate chips, raisins, or chopped mini eggs!
  • Make chocolate smarties cookies by replacing 25g of flour with cocoa powder.
  • Add the zest of half an orange for extra flavour.
  • Drizzle the baked cookies with melted white chocolate for special occasions.
 
Storage:
Store - The smarties cookies will keep in an airtight container for up to 3 days.
Freeze - Once cool, the cookies can be frozen for up to 3 months. Defrost at room temperature before serving.
