Equipment

  • Air Fryer
  • Knife
  • Pastry Brush
  • Meat Thermometer

Ingredients

  • 375 g Ready Rolled Puff Pastry Sheet
  • 450 g Sausage Meat
  • 1 tablespoon Apple Sauce
  • 1 Egg beaten

Instructions

  • Preheat the air fryer to 200°C (400F).
  • Cut the puff pastry sheet into 3 equal horizontal slices (refer to photo above).
375 g Ready Rolled Puff Pastry Sheet
  • Mix together the sausage meat and apple sauce and equally distribute it into the middle of each puff pastry slice.
450 g Sausage Meat, 1 tablespoon Apple Sauce
  • Brush the egg wash along the bottom of each piece of puff pastry with a pastry brush, then fold the top edge of the pastry over to meet the bottom, encasing the sausage meat inside.
    1 Egg
  • Use a fork to seal the edges together then cut each long sausage roll into 8 smaller ones, so you end up with 24 mini sausage rolls in total.
  • Use a sharp knife to cut a small slit in the top of each sausage roll and brush with egg wash.
  • Place the sausage rolls in the air fryer basket and air fry for 10-12 minutes (larger sausage rolls will need longer) until the pastry is golden and crispy.
Pro Tip: Use a meat thermometer to make sure the centres of the sausage rolls have reached 75C (you only need to test one).
  • Cool on a wire rack for 5 - 10 minutes before serving.

Notes

Expert Tips:
  • Preheat your air fryer before baking the sausage rolls. This will help the pastry become crisp and flakey.
  • Allow the puff pastry to rest at room temperature for 20 minutes before using it. If it’s too cold, it will break easily when unrolled.
  • Thoroughly brush each sausage roll in egg wash so they have an even golden colour when baked.
  • Make sure the sausage rolls are in a single layer in your air fryer. Depending on the size of your air fryer, you may need to air fry them in 2 batches.

Variations:
  • Replace the apple sauce with caramelised onion chutney for a richer flavour.
  • Add a small handful of grated cheese (cheddar is best, but hard mozzarella would also work) to make sausage and cheese rolls.
  • Stir 1 teaspoon of wholegrain mustard or dijon mustard into the sausage meat for added flavour.
  • Add a sprinkling of poppy seeds to the top of each sausage roll, after they have been glazed with egg wash.

Storage:
Store - The cooked sausage rolls can be stored in an airtight container in the fridge for up to 3 days.
Reheat - The mini sausage rolls can be served cold, at room temperature, or hot. Reheat in the air fryer or oven for a few minutes.
Freeze - The sausage rolls can be frozen unbaked or baked for up to 3 months. If freezing unbaked there is no need to defrost them before air frying. Just pop them straight into the air fryer and add a few minutes to the cooking time.
