Potato - look for potatoes that are firm and have smooth skin. Any white potato will work well. I used Maris Piper.
Leeks - you'll need two fresh leeks (look for leeks that are firm, with crisp, green leaves and a white stem), sliced thinly.
Onion - peeled and finely chopped.
Garlic - one clove, finely chopped.
Stock - vegetable stock made from a stock pot or stock cube.
Salt & Pepper - for seasoning.
Double Cream - adds richness and a smooth silky texture to the soup.
🔪 How to make leek and potato soup in a soup maker

One: Peel and chop the onion, garlic, potatoes and trim and slice the leeks.
Two: Place the chopped vegetables in your soup maker, pour over the stock, and season with salt and pepper. Set it to 'smooth soup' function and switch on.
Three: When the soup maker has finished (it took 21 minutes in my Morphy Richards 1.6 L soup maker), open the lid and pour in the cream. Put the lid back on and blend for a few seconds until combined.
Four: Serve in bowls with fresh crusty bread and a sprinkling of chopped parsley or chives.
