This easy Spanish chicken and chorizo stew is ready in just 30 minutes. Tender chicken breast, smoky Spanish chorizo and red bell pepper simmer in a rich tomato and smoked paprika sauce for an easy one-pot weeknight dinner.
Turn up the heat, add the bite-size chicken breast pieces and cook until the outside of the chicken has changed colour.
4 Chicken Breasts
Pour in the passata and chicken stock, then add the sugar and season to taste.
400 g Passata (Strained Tomatoes), 200 ml Chicken Stock (Chicken Broth), 1 tsp Salt, 1 tsp Sugar, ½ tsp Black Pepper
Bring to a gentle simmer and cook uncovered until the chicken is cooked through and the tomato sauce has thickened. Scatter with parsley and serve immediately with your choice of side dish.

Chorizo: Use cured Spanish-style chorizo rather than raw cooking chorizo. Mild or spicy both work. US readers should look for Spanish chorizo rather than fresh Mexican chorizo, which has a different texture and needs to be fully cooked.
No oil needed: Fry the chorizo in a dry pan first; it releases enough oil to cook the onion and pepper.
Chicken: Cut the chicken breast into evenly sized pieces so it cooks quickly and evenly. Boneless chicken thighs can also be used but may need slightly longer.
Salt: Chorizo and chicken stock can both be salty, so season to taste at the end of cooking.
Thicker sauce: Simmer uncovered for a few extra minutes if the sauce is too thin.
Storage: Keep leftovers in an airtight container in the fridge for up to 3 days.
Freezing: Freeze for up to 3 months and defrost overnight in the fridge before reheating.
