Easy Puff Pastry Sausage Rolls

Made with just 5 ingredients, these super easy puff pastry sausage rolls are perfect for snacks, lunchboxes, and parties. Shop-bought sausagemeat is given a makeover with the addition of dry stuffing mix and apple sauce, before being wrapped up in a puff pastry blanket, glazed with an egg wash, and baked in the oven!

Ingredients

  • 320 g Ready Rolled Puff Pastry Sheet or use homemade puff pastry.
  • 400 g Sausagemeat or use the equivalent weight in sausages, with meat squeezed out of the skins.
  • 80 g Dry Stuffing Mix I use sage and onion flavour.
  • 3 tablespoon Apple Sauce
  • 1 Egg

Instructions

  • Preheat the oven to 220°c (200 fan/ 425F/ Gas 7) and line a large baking sheet with baking paper.
  • In a bowl mix together the sausagemeat, stuffing mix and apple sauce.
    400 g Sausagemeat, 80 g Dry Stuffing Mix, 3 tablespoon Apple Sauce
  • Lay the ready rolled puff pastry sheet onto a board and cut it in half on the long edge, so you have two long rectangles.
    320 g Ready Rolled Puff Pastry Sheet
  • Divide the stuffing mix between the two rectangles and make a sausage like shape with the mixture in the middle of each piece of pastry.
  • Brush the top and bottom long edges of each piece of pastry with beaten egg (using a pastry brush) and then fold the top of the pastry over the sausagemeat to meet the bottom of the pastry. Use a fork and press down the edges.

  • Cut each length into 8 sausage rolls so you have 16 in total and place on the baking tray.
  • Make a small slit in the top of each sausage roll with a sharp knife and brush with egg. Bake for 15 minutes until golden.

Notes

Variations:
  • Replace the apple sauce with caramelised onion chutney for a more intense flavour.
  • Add a small handful of grated cheese to make sausage and cheese rolls.
  • Add a sprinkling of poppy seeds to the top of each sausage roll, after you have glazed them with egg wash.
  • Make them vegetarian by using the filling from veggie sausages.
 
Freezing: The sausage rolls can be frozen unbaked or baked. If freezing unbaked, do not apply the egg wash before freezing. Place the sausage rolls (minus the egg wash) onto the prepared baking sheet and open freeze for a few hours (place the baking sheet directly into your freezer uncovered). Once frozen, place the sausage rolls into freezer bags. The sausage rolls can be cooked straight from frozen but don't forget to apply the egg wash before you put them in the oven.
