Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion peeled and finely chopped
  • 2 Garlic Cloves peeled and finely chopped
  • 1 Red Pepper deseeded and cut into strips
  • 500 g Quorn Mince no need to defrost first
  • 2 teaspoon Chilli Powder
  • 3 teaspoon Smoked Paprika
  • 3 teaspoon Ground Cumin
  • 2 teaspoon Ground Coriander
  • 1 teaspoon Oregano
  • 400 g Tin of Tomato Soup or use chopped tomatoes instead
  • 400 g Tin of Kidney Beans in Chilli Sauce
  • 1 tablespoon Coriander Leaves chopped finely
  • Salt, Pepper and Sriracha Sauce to serve

Instructions

  • Heat the oil in a frying pan and cook the onion, garlic and red pepper strips for 4-5 minutes.
    1 tablespoon Olive Oil, 1 Onion, 2 Garlic Cloves, 1 Red Pepper
  • Add the frozen Quorn mince and continue to cook for a further 5 minutes until defrosted, stirring often to prevent it from sticking to the bottom of the pan.
    500 g Quorn Mince
  • Stir in the spices.
    2 teaspoon Chilli Powder, 3 teaspoon Smoked Paprika, 3 teaspoon Ground Cumin, 2 teaspoon Ground Coriander, 1 teaspoon Oregano
  • Add the tin of tomato soup and kidney beans in chilli sauce. Simmer for 10 minutes.
    400 g Tin of Tomato Soup, 400 g Tin of Kidney Beans in Chilli Sauce
  • Season and serve with coriander, rice, tortilla chips, grated cheddar and sriracha sauce for those who like it hot!
    1 tablespoon Coriander Leaves, Salt, Pepper and Sriracha Sauce to serve

Notes

Top Tips:
  • Always keep a packet of frozen Quorn mince in the freezer so you're never too far away from delicious meals like this.
  • There is no need to defrost the Quorn mince beforehand. Use it straight from the freezer.
 
Variations:
  • Like things spicy? Use double the amount of chilli powder.
  • Add another tin of kidney beans for extra protein.
  • Add more vegetables such as sliced mushrooms, an extra pepper, or baby spinach.
  • Swap the Quorn mince for beef mince for a richer more meaty chilli con carne.
 
Storage:
The Quorn chilli will keep in the fridge for 5 days. Reheat in the microwave until piping hot. The chilli can also be frozen for up to 3 months.
