30 Minute Baked Tortellini

A quick and easy baked tortellini recipe with only 7 ingredients! Ready in under 30 minutes.

Ingredients

  • 500 g Pasta Sauce I used creamy tomato
  • 100 ml Double Cream
  • 300 g Fresh Tortellini I used four cheese
  • 160 g Smoked Sausage sliced
  • 10 g Basil torn (a small handful)
  • 125 g Ball of Mozzarella drained and sliced
  • 50 g Parmesan grated

Instructions

  • Preheat the oven to 180°C (160 fan/ 350F/ Gas 4).
  • In a large mixing bowl stir the pasta sauce and double cream together until combined.
    500 g Pasta Sauce, 100 ml Double Cream
  • Add in the fresh tortellini, sliced smoked sausage and torn basil leaves and stir until the sauce has coated all of the ingredients.
    300 g Fresh Tortellini, 160 g Smoked Sausage, 10 g Basil
  • Spoon the pasta into a baking dish and top with the sliced mozzarella and grated Parmesan.
    125 g Ball of Mozzarella, 50 g Parmesan
  • Bake in the oven for 25 minutes.

Notes

Top Tips:
  • If you like your pasta bakes with a golden crispy top, just pop the baked tortellini under the grill for 1-2 minutes once it has finished in the oven. Keep an eye on it to make sure it doesn't burn.
  • Make sure your baking dish is an adequate size for the pasta bake. I always place the baking dish on a baking tray so that if any sauce does bubble up over, the tray catches it and I don't have to clean the oven (worst job ever!).
  • Take 5 minutes in the morning to assemble the pasta bake and leave in the fridge. Once everyone is home from school and work all you need to do is pop it straight in the oven!
 
Variations:
  • Vary the tortellini you use. I like spinach and ricotta or smoked ham. Just make sure you use fresh pasta.
  • Up the veggies by adding chopped roasted red peppers, sun-dried tomatoes or drained tinned sweetcorn.
  • Stir in a spoon of sun-dried tomato pesto to give the dish a flavour boost.
  • Instead of mozzarella, why not try topping the baked pasta with grated cheddar instead.
  • Stir through leftover roast chicken, gammon or even chorizo into the pasta bake. It's a great dish for using up leftovers.
  • Try using a creamy carbonara pasta sauce instead of a tomato pasta sauce.
