Easy Overnight Weetabix

Ingredients

For the Weetabix layer

  • 2 Weetabix
  • 80 ml Milk

For the yogurt layer

  • 170 g Plain Yogurt
  • 1 teaspoon Maple Syrup
  • ¼ teaspoon Vanilla Extract
  • 1 tablespoon Biscoff Spread

Toppings

  • 1 Banana sliced
  • 1 tablespoon Chocolate Chips
  • 1 Biscoff Biscuit crushed

Instructions

  • Crush the Weetabix in a bowl and stir in the milk.
    2 Weetabix, 80 ml Milk
  • Once all of the milk has soaked in, press the mixture into the bottom of a small glass jar, Tupperware container, or bowl. Compact it tightly with the back of a metal spoon.
  • Mix the maple syrup and vanilla extract into the yogurt and spoon over the crushed Weetabix.
    170 g Plain Yogurt, 1 teaspoon Maple Syrup, ¼ teaspoon Vanilla Extract
  • Drizzle over the Biscoff spread and swirl in with a skewer. Cover and chill overnight.
    1 tablespoon Biscoff Spread
  • Serve with sliced banana, chocolate chips, and crushed Biscoff biscuits.

Notes

Variations:
  • Mixed Berries: Use blueberry compote or blackcurrant coulis instead of Biscoff spread and top with fresh berries like raspberries or strawberries.
  • Nutella and Peanut Butter: Add a layer of Nutella and peanut butter to the Weetabix and top with sliced banana.
  • Crunchy Granola: Instead of chocolate chips, top the Weetabix with peanut butter granola or chopped nuts like walnuts or pecans. Pumpin seeds and chia seeds could also be added.
  • Sugar-Free: Leave out the maple syrup or honey to make a sugar-free version that's perfect for those on a low-sugar diet.
  • High-Protein: Mix in a scoop of protein powder with the Weetabix and milk to up the protein content.
  • No-Yogurt Version: Leave out the yogurt layer completely and just top with sliced fruit.
  • Strawberry Cheesecake: Mix in cream cheese with the yogurt layer and add a layer of strawberry coulis on top for a delicious strawberry Weetabix cheesecake version.
 
Storage:
Store - Once prepared, store your overnight Weetabix in an airtight container in the fridge for up to 2-3 days. This makes it a great make-ahead breakfast option, perfect for busy mornings!
Freeze - I would not recommend freezing overnight Weetabix, as the texture of the Weetabix and the toppings may be affected.
