Easy Melting Moments Biscuits

Crisp on the outside and soft in the middle, these buttery, sweet melting moments biscuits are perfect with a cup of tea!

Equipment

Ingredients

  • 200 g Butter softened
  • 100 g Caster Sugar
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 250 g Self Raising Flour
  • 50 g Oats
  • 8 Glace Cherries

Instructions

  • Preheat the oven to 180°c (160 fan/ Gas 4) and line 2 large baking trays with baking paper.
  • In a large mixing bowl cream together the butter and sugar with a wooden spoon until light and fluffy.
    200 g Butter, 100 g Caster Sugar
  • Beat in the egg and vanilla extract.
    1 Egg, 1 teaspoon Vanilla Extract
  • Fold in the flour.
    250 g Self Raising Flour
  • Roll walnut size pieces of biscuit dough into round balls then roll them in the oats.
    50 g Oats
  • Place the biscuits on a lined baking tray and top each one with a halved glace cherry. Bake in the oven for 12 minutes until golden brown.

Notes

Expert Tips:
  • Make sure all of the ingredients are at room temperature before beginning the recipe.
  • Space the biscuits out on the baking tray, because they spread when baked. You'll need two large baking trays lined with nonstick baking paper.
  • Be careful not to overbake. Overbaking will result in biscuits that are too crunchy, so it's important to keep a close eye on them as they bake and remove them from the oven as soon as they are lightly golden brown.
 
Variations:
  • Instead of rolling the melting moments in oats, swap for crushed cornflakes or desiccated coconut.
  • Add the zest of a lemon to the biscuit dough for extra flavour.
  • Add a handful of chocolate chips to the biscuit dough before baking.
  • Top the biscuits with chocolate buttons or pecan nuts instead of cherries.
  • Swap the vanilla extract for almond extract for an almondy flavour.
 
Storage:
Store - Place the biscuits in an airtight container and store them at room temperature for up to 5 days.
Freeze - Once cooled, place the biscuits in a freezer-safe container and freeze for up to 3 months. To defrost, simply remove the biscuits from the freezer and allow them to thaw at room temperature for 30 minutes.
