Chocolate Hedgehog Slice

This classic no-bake chocolate hedgehog slice is chewy, chocolatey, and oh so moreish! One slice is never enough.

Equipment

Ingredients

  • 397 g Condensed Milk
  • 100 g Butter
  • 100 g Dark Chocolate broken into squares
  • 50 g Milk Chocolate broken into squares
  • 2 tablespoon Cocoa Powder
  • 250 g Digestive Biscuits crushed
  • 45 g Cornflakes crushed
  • 70 g Desiccated Coconut

For the topping

  • 100 g Dark Chocolate
  • 100 g Milk Chocolate
  • 2 tablespoon Coconut Oil

Instructions

  • Line a 20cm square baking tin with cling film (plastic wrap). Make sure the clingfilm overhangs the edges which will make getting it out of the tin easier.
  • Place the condensed milk. dark and milk chocolate and butter in a large microwaveable bowl and melt in the microwave in 30 second bursts (stirring in-between until melted).
  • Put the crushed biscuits, cornflakes, desiccated coconut and cocoa powder in another bowl and pour on the melted chocolate mixture. Give everything a good stir.
  • Press the mixture into the tin (use the back of a metal spoon to make sure it is compacted).
  • Melt the topping ingredients together in the micorwave in 20 second bursts (stirring in-between). Pour onto the hedgehog slice and smooth with a palette knife.
  • Place in the fridge to set for 2 hours.
  • Take the tin out of the fridge about 20 minutes prior to cutting it. Lift up the overhanging clingfilm and place the slice onto a large chopping board. Use a sharp knife (dipped in boiling water between each cut) to cut clean slices. Store in the fridge.

Notes

Top Tips:
  • Don't skip on the coconut oil for the topping! It helps to stop it from cracking when you cut it.
  • Take the tin out of the fridge 20 minutes before cutting it into bars. It makes cutting a lot easier and also prevents the topping from cracking.
  • Dip your knife in boiling water to help get clean slices.
  • Use good quality chocolate. Cheaper chocolate has the habit of going grainy.
 
Variations:
  • Add a handful of chopped nuts to the mixture. Walnut or hazelnuts would work well.
  • Raisins or dried cranberries would make a delicious fruity addition!
  • Try using different biscuits such as shortbread or ginger nuts (or you could use a combination of different biscuits). It's a great recipe for making use of those broken biscuits at the bottom of the biscuit tin!
 
Storage:
The hedgehog slices will keep in the fridge for up to 5 days. The no-bake slices can also be frozen for up to 3 months. Place in layers in a freezer-safe container.
