Frozen Blueberry Yogurt Bites

These frozen blueberry yogurt bites have just 4 ingredients and couldn't be easier to make! They are super healthy and are a great after school snack for kids.

  • 12 silicone cases

Ingredients

  • 500 g Greek Yogurt
  • 3 tablespoon Lemon Curd
  • 1 tablespoon Fruit Coulis any flavour
  • 100 g Blueberries

Instructions

  • In a bowl mix together the greek yogurt, lemon curd and fruit coulis.
  • Fold in half of the fresh blueberries.
  • Spoon the yogurt mixture into 12 silicone cases.
  • Top with the remaining fresh blueberries.
  • Freeze for 2 hours before eating. Store in the freezer.

Notes

Use honey instead of lemon curd and fruit coulis, to sweeten the yogurt.
Try different fruits such as raspberries, blackberries and strawberries.
Add a handful of granola for crunch and texture.
