Air Fryer Mini Egg Dessert Pots

These easy air fryer mini egg dessert pots are individual cookie dough style puddings stuffed full of Cadbury mini eggs.

Ingredients

  • 50 g Light Brown Sugar
  • 25 g Caster Sugar
  • 115 g Butter melted
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 160 g Plain Flour
  • ½ teaspoon Bicarbonate of Soda
  • ¼ teaspoon Salt
  • 150 g Mini Eggs crushed, plus a few extra for decoration

Instructions

  • Preheat the air fryer to 160C (320F).
  • In a mixing bowl beat together the melted butter, sugars, egg, and vanilla extract with a wooden spoon.
    50 g Light Brown Sugar, 25 g Caster Sugar, 115 g Butter, 1 Egg, 1 teaspoon Vanilla Extract
  • Mix in the plain flour, bicarbonate of soda, and salt.
    160 g Plain Flour, ½ teaspoon Bicarbonate of Soda, ¼ teaspoon Salt
  • Fold through the crushed mini eggs and divide the mixture between 4 ramekins.
    150 g Mini Eggs
  • Air fry for 7-8 minutes until the top is golden but the underneath is still gooey. Allow the pots to cool for 5 minutes before serving with ice cream and more mini eggs. Use oven gloves to lift the ramekins out of the air fryer as they will be very hot!

Notes

Expert Tip:
The cookie dough mixture should come away easily from the sides of the mixing bowl. If it's still a little sticky, add a bit more flour.
 
Variations:
  • Use mini creme eggs instead of mini eggs. Freeze the mini creme eggs before using them in the recipe to prevent them from melting completely into the dough when cooked.
  • Add a handful of dark chocolate chips to the mixture for a richer flavour.
  • Swap out 30g of flour for cocoa powder for a more chocolatey taste.
 
Storage:
Store - The air fryer mini egg pots are best eaten straight out of the air fryer with a scoop of ice cream. Leftovers can be stored in the fridge for up to 3 days.
Reheat - Reheat in the air fryer or microwave.
Freeze - Freeze the unbaked cookie dough mixture in the individual ramekins. Defrost in the fridge before air frying as directed in the recipe.
