Mincemeat Crumble Slices

These easy mincemeat crumble slices make a nice change from traditional mince pies during the festive season, with buttery oat crumble sandwiching the fruity mincemeat middle!

Ingredients

  • 200 g Plain Flour
  • 200 g Oats
  • 1 teaspoon Cinnamon
  • 200 g Butter salted and cubed
  • 75 g Light Brown Sugar
  • 75 g Walnuts chopped
  • 400 g Mincemeat

Instructions

  • Preheat the oven to 190°C (170fan/ Gas 5/ 375F) and grease and line a 20cm (8 inch) square baking tin with nonstick baking paper or parchment paper.
  • Put the flour, oats, and cinnamon in a large mixing bowl and rub in the cold cubed butter until you get a breadcrumb consistency. You can do this in the food processor if you prefer, using the pulse setting.
    200 g Plain Flour, 200 g Oats, 1 teaspoon Cinnamon, 200 g Butter
  • Stir in the sugar.
    75 g Light Brown Sugar
  • Press half of the crumble mixture into the base of the tin. Compact it down firmly with the back of a heavy metal spoon.
  • Spread over the mincemeat.
    400 g Mincemeat
  • Mix the chopped walnuts into the remaining crumble mixture and scatter on top of the mincemeat. Lightly press down with your hands.
    75 g Walnuts
  • Bake in the oven for 35-40 minutes until golden brown.
  • Allow to cool completely before cutting into bars. Dust with icing sugar if you like!

Notes

Expert Tip:
  • Don't attempt to cut the mincemeat tray bake into bars until they have completely cooled. It's best to leave them overnight if you can. Speed up the cooling process by placing the tin in the fridge.
 
Variations:
  • Add the zest of an orange or clementine to the mincemeat.
  • Add a grated apple to the mincemeat for a fruitier flavour.
  • Replace 3 tablespoons of oats with ground almonds for a softer textured bar.
  • Swap the chopped walnuts for crunchy flaked almonds.
  • Serve with creamy custard for a comforting winter pudding.
  • Dust with icing sugar before serving!
 
Storage:
Store: The flapjacks will keep in an airtight container for up to 5 days.
Freeze: They can be frozen for up to 3 months. Once cool, place the bars into a freezer-safe container or freezer bag. Defrost at room temperature before serving.
