Easy Air Fryer Chicken Fajitas

Tasty air fryer chicken fajitas, made with succulent tender chicken strips, crunchy sliced peppers, sweet onions, and homemade fajita seasoning!

Ingredients

  • 4 Chicken Breasts cut into strips
  • 2 Peppers halved, deseeded and cut into strips
  • 1 Onion peeled and sliced
  • 1 tablespoon Olive Oil

Fajita Mix

  • 2 teaspoon Cumin
  • 2 teaspoon Smoked Paprika
  • 2 teaspoon Oregano
  • 1 teaspoon Chilli Powder
  • 1 teaspoon Garlic Powder
  • ¼ teaspoon Cayenne
  • ½ teaspoon Salt
  • ¼ teaspoon Pepper

Instructions

  • Preheat the air fryer to 200°C (400F).
  • Place the chicken, peppers, and onions in a mixing bowl, and mix in the olive oil and fajita spice mix.
    4 Chicken Breasts, 2 Peppers, 1 Onion, 1 tablespoon Olive Oil, 2 teaspoon Cumin, 2 teaspoon Smoked Paprika, 2 teaspoon Oregano, 1 teaspoon Chilli Powder, 1 teaspoon Garlic Powder, ¼ teaspoon Cayenne, ½ teaspoon Salt, ¼ teaspoon Pepper
  • Spoon the mixture into the air fryer basket and air fry for 15-17 minutes, shaking often to ensure even cooking.
  • Test the chicken with a meat thermometer to make sure it has reached 75C (165F) internally.

Notes

Expert Tips:
  • Ensure the chicken and vegetables are not too overcrowded in your air fryer basket. Depending on the size of your air fryer, you may need to cook in two batches or half the recipe.
  • Save time and use a store-bought fajita seasoning mix (1 standard sachet) instead of making your own.
  • If you have time, marinate the chicken and vegetables in the fajita spice mix for an hour before air frying. Or even better, mix everything together the night before and store it in the fridge until ready to cook!
 
Variations:
  • Make them spicy and add a chopped red chili or a teaspoon of chipotle paste.
  • Use chicken thighs instead of chicken breasts.
  • For air fryer veggie fajitas omit the chicken strips and add more peppers and onions.
 
Storage:
Store - Air fryer fajitas are best eaten fresh, straight out of the air fryer. Leftovers can be sorted in an airtight container in the fridge for up to 2 days.
Reheat - Microwave or air fry until piping hot.
Freeze - The cooked fajita mix can be frozen for up to 3 months. Defrost in the fridge before reheating.
