Notes

Expert Tips:
  • Ensure your ingredients are at room temperature before beginning the recipe.
  • Use an electric whisk or stand mixer to beat the sponge batter together, to make it even more speedy (the only downside is you end up with more washing up!).
  • Grease the baking dish generously to prevent the sponge from sticking to the sides.

Variations:
  • Use different flavour fruit curds. Orange curd would work well.
  • Add 100g of white chocolate chips to the sponge batter for sweetness.
  • Make a chocolate sponge pudding and replace 30g of flour with cocoa powder and swap the lemon curd for chocolate sauce or ganache.
  • Make this quick lemon pudding in individual ramekins instead of one large baking dish. Reduce the cooking time in the microwave accordingly.
  • Bake the lemon sponge pudding in the oven instead of cooking it in the microwave.

Storage:
Store: The microwave sponge pudding is best eaten fresh. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
Reheat: Reheat in the microwave until warm.
Freeze: Freeze leftovers for up to 3 months. Defrost at room temperature before reheating in the microwave.
